This Gluten-Free Rocky Road is the delicious combination of chocolate, peanuts, marshmallows, and jellies...a tasty dessert or a perfect gift for friends and loved ones!
I have a little weakness for Rocky Road...actually it is a big weakness.
I love this dessert - 'Rocky Road' because it is the perfect blend of
smooth chocolate,
sprinkled with crunchy peanuts,
mixed in with fluffy marshmallows,
with some hidden surprises of sweet jellies!
(Even writing this makes my mouth water! 😉)
For a long time, I had to control my urges for Rocky Road because being gluten-free meant that I couldn't eat this sweet treat.
Now that gluten-free products are more available there is a whole range of different products including...marshmallows and jellies !!!
See me smile... I can make ...and eat... Rocky Road again!
Rocky Road is easy to make and it is great to take to parties,
it makes a really nice homemade gift for friends and it is even better just to eat! (.... in moderation of course 😉)
You can add whatever you like to this dessert..you could add walnuts, crushed gluten-free cookies or biscuits, glaced cherries or even gluten-free Turkish Delight...you could add some peppermint favour... actually you can add whatever takes your fancy!
Ingredients for Gluten Free Rocky Road
- 1 block of Dark Melting Chocolate (200g)
- ½ cup of gluten free jellies - chopped ( or more if you love jellies/lollies)
- 1 cup of gluten free marshmallows
- ½ cup of desiccated coconut
- ½ cup crushed peanuts and some extra to sprinkle on top.
How to make Gluten Free Rocky Road!
- Cut up the marshmallows and jellies into smaller pieces.
- In another bowl melt the block of chocolate.
- I melt the chocolate by breaking the chocolate into smaller pieces, putting it into a microwave bowl, and melting it for 30 seconds then stirring it - so pieces of chocolate don't stick and then melting it again for 30 seconds and then stirring. I repeat this till the chocolate is smooth and runny. Please be careful as the chocolate and bowl is hot!
- Add to the melted chocolate the crushed peanuts, coconut, marshmallows and jellies,
- Mixed together to make sure the chocolate covers all the pieces of marshmallows and jellies.
- Place the chocolate mixture into a tray, lined with baking paper and sprinkle with some peanuts and place in the fridge till the chocolate goes hard.
Recipe for Gluten Free Rocky Road!
- 1 block of good quality Dark Melting Chocolate (200g) (I use Plaistowe Dark Chocolate)
- ½ cup of gluten free jellies - chopped
