These Gluten-Free Chocolate Peanut Butter Bars are so easy to make, they don't need baking and they are delicious...very hard to stop at one!!
Ok... I am just going to say it... I love these bars!!
....not because they are easy to make,
or because they don't need fancy ingredients,
or they don't need baking,
or that I am 'very popular' every time I make these bars (that is always a bonus π )
..... butΒ because they are soooo delicious!!!!! Β
(how many exclamation points are you allowed to put afterΒ a word so it really stands out? ...Ok I will bold it asΒ well Β π)
So after giving you the idea that these are just fantastic, have a look to see how 'normal' the ingredients are - ones that are always in the pantry and look how easy they are to make!
Ingredients for Gluten Free Chocolate Peanut Butter Bars
- 1 cup of gluten free oats
- 1 cup of desiccated coconut
- ΒΌ cup of almond meal
- ΒΎ cup of peanut butter
- Β½ cup of honey
- ΒΌ teaspoon of salt
- 1 teaspoon of vanilla
Topping
- ΒΌ cup of dark chocolate bits
- 1 tablespoon of peanut butter
....see nothing fancy here....
How to make Gluten Free Chocolate Peanut Butter Bars!
- In a bowl add in the oats, coconut and almond meal and mix together
- In a microwave bowl add in the butter and honey and melt in the microwave
- Add in the vanilla and salt and mix with the dry ingredients
- Pour into a pan that is lined with baking paper and let it sit on the counter while making the topping.
For the topping
- Melt the chocolate bits and peanut butter together.
- Spread the melted chocolate and peanut butter over the base and leave it to set or place in the fridge to set.
- When set, take them out the pan and cut into squares or bar shape and indulge!
- They are best stored in an airtight container...if there are any left!

I the recipe for the peanut butter bars you did not say if the almond meal was a cup or spoon and since I am not familiar with that ingredient I was stumped and did not try making it, please advise
