    An easy way to make delicious gluten-free bread in a bread machine. All the tips for making a gluten-free bread loaf perfect for sandwiches or toast!!

    So it is not very often you come across a great recipe for gluten-free bread....when you do, you probably should sing from the mountain tops like in the Sound of Music! 

    Yes....sounds silly but a good gluten-free bread recipe is like diamonds to gluten-free foodies. I may be overacting but great, hot bread is the thing I miss the most about being gluten-free.

     I actually like the taste of gluten-free pasta and I love using almond meal when baking...but gluten-free bread in a bread cooker is a dream come true!

    So I have to be honest and say I have experimented with cooking bread in the bread cooker a lot....sometimes it came out like a tiny rock cake and other times it just tasted really gritty. I think I am so close with this one...I just can't decide whether two eggs or three is the way to go. 

    Maybe you could have a try and let me know what you think?

    I have cooked this loaf with three eggs and it tastes fantastic especially when it is hot and topped with ham and tomato sauce...(it has a slight egg flavour to it that goes perfectly with ham)

    When you leave it to cool, it just becomes bread that is perfect as toast, smothered in butter, topped with a range of toppings, and even made into garlic bread!!   ...mmm...gluten-free heaven 😉

    How to make Gluten-Free Bread in a bread machine!

    Dry Ingredients 

    • 3 ½ cups of gluten-free self-raising flour (I use the Orgran brand or DIY Gluten-Free Flour Mixes)
    • 1 tablespoon of xanthan gum
    • 2 tablespoons of sugar
    • 1 teaspoon of salt
    • 1 sachet (7 grams) of dried yeast
    Wet Ingredients
    • 1 ½ cups of almond milk (or milk of your choice)
    • ¼ cup of olive oil
    • 3 eggs - medium
    • 1 teaspoon of white vinegar
     
    Method
    • Mix all the dry ingredients together in a bowl.
    • In another bowl, mix all the wet ingredients until blended.
    • Place the wet ingredients into the pan of the bread machine.

    • Spoon in the dry ingredients on top of the wet ones.
    • Mix the dry and wet together slightly in the bread pan.
    • Turn on the bread machine and bake on the basic setting. (My machine takes 3 hours and 5 minutes.)

    (Oh! it fills your home with the wonderful smell of home-cooked bread) 
    • When the bread has finished cooking leave the bread in the bread pan for 15 mins and then turn it out and let it cool.

    It is easier to slice when it is cold.... but large, crusty slices when it is warm, is just as good!

    We have even toasted slices of this bread on the open fire...
    and it added that perfect smoky flavour...and all it needed was a good dollop of butter! 
    (... now I am drooling 😉 )

      Hi there - I found you on the create and share link party and so glad I did! I am 100% gluten free. I don't have a bread maker BUT seeing your post makes me motivated to go get one!! This looks so good and sometimes I just miss having a 'regular' piece of toast or bread for a sandwich!

      Is there an alternative to the flour? For Example could coconut flour, or almond flour, etc. be used? I am not allergic to anything, but trying more Paleo recipes to calm my digestive issues (constipation, bloating). Much thanks for any help you can offer!

        Hi Jill!!
        I have not tried it with other flours as yet.
        Coconut flour is very absorbent and a little more dense.
        If you are going to try it, you would need to add more liquid and perhaps another egg or two.
        Please let me know if you do try it how it goes!!...nothing like a little experiment 😉

      If you have a GF setting on your bread machine, could you use that? Also, is it best for the wet ingredients to be at room temperature?

        Hi Christina!!
        I have had my bread machine for a looooong time and it is very basic! You must have a modern one, with the GF setting.
        I have not used a bread machine with the GF setting... but I think, give it a try!!....(maybe it just cooks a little longer but check the instructions first). Would love to know how it goes!

        Yes, I use my wet ingredients at room temperature.

        Hi Mary!!
        Self-Raising flour already has the raising agent in it. It usually is 3/4 cup of flour, 1 teaspoon of baking powder and a 1/4 of a teaspoon of salt for gluten free flour ..... or 1 cup of wheat flour, 1 teaspoon of baking powder and 1/4 teaspoon of salt. In Australia, you can buy self-raising flour but if you can't buy it that way, simply make it yourself by adding in the baking powder and salt.

      What a great recipe! I've tried a few gluten free bread machine recipes and this was the first one that worked! Soft delicious bread! Woo hoo!!! I mixed my own flours using the 4 flour mix on the link you have. I added the baking powder and salt to make it self-rising. I'm so happy to have an alternative to buying expensive gluten free breads at the market. Thank you!!

      I'm excited to try this! Id have to make it rising with the extra baking powder and salt. My flour has xantham already in it, do I still add more?

        I add xantham because my flour doesn't already have it in ....so I wouldn't add anymore. To find out more about xantham, click across to this post.

        This bread is so delicious, we made some today and just before it starting baking, swirled olive spread through it!! It is so nice dipped in balsamic vinegar, olive oil and almond duhkah!! Enjoy and have a great day!! 😃

      My bread machine is quite old, as I inherited it from my mom when I was recently diagnosed with Celiac; having said said it rises twice on all settings, will this recipe still work if the machine lets it rise two time? I have read a few bread machine recipes that say they will not work if you allow it to rise twice.

        Hi Emily!!
        My bread machine now has a gluten free setting and the main difference between this one and others is that it has one 'rise' time and just makes the whole cycle quicker eg 2.20 hours rather than 3.05 hours. The bonus about this gluten free bread recipe is that it will rise to all it needs, in the first 'rise'.

      I make this recipe 2-3 times a week in my bread maker. About two weeks ago, I accidentally put in 1/2 a cup of olive oil (rather than a 1/4). When it came out, it had a much softer texture then usual, more like brioche. It toasted and tasted better, and didn't go stale as quickly either. I highly recommend you add a bit more olive oil to this recipe to get the most out of your bread.

      Hi, I followed your recipe and it came out perfect! I didn't have xanthum gum on hand so replaced it with psyllium powder. I have just cut a slice while hot and slathered it with butter...its been so long since ive eaten hot buttered bread, I'm in heaven!

      Really great GF bread. I put 2.5 eggs in and used the normal basic bread making cycle( 4 hours) on my bread maker.My breadmaker does have a GF cycle of 1hour 20 min but I have found this to make poor bread in the past. My 16 year old son ( GF)who is quite fussy loved the bread. We will definitely make again.

      I made this bread today. Half way through the rising (in the bread machine) my power went out. OhNo! When it came back on the machine defaulted to the beginning. So I had to remove it from the machine, finish rising the bread in a warm spot and then put it in the oven. Anyway, it still turned out beautifully! I made it as in your recipe except for subbing one Tbsp of molasses instead of one of the Tablespoons of sugar. Thank you!

      Hi found your recipe for the bread yesterday by mistake, decided to give it a go, I brought a Breadmachine when I was told I have to eat Gluten Free none of the recipes worked. This one was perfect, enjoyed it hot as well as cold. I cooked it using the basic setting am going to try the gluten free setting next time to see how it well come out . Also going to try the dough setting to see if I can attempt to make bread rolls as well. Thanks again I've finally got a bread that I can enjoy.

      Best bread I've had since going gluten-free! I only made two small substitutions, sunflower oil for olive oil and added 1 teaspoon of potato flakes. I can't wait to see how it is for sandwiches!

      OMG... cannot thank you enough for this GF bread recipe...
      I have bought every type of flour known to man, tried every recipe, made my own flours - nothing has ever turned out as perfect and as light as yours.
      To think that normal everyday White Wings SR flour and a few extra ingredients would work as fantastic as this did.☺
      I used my Panasonic SD2501 - full cycle for a medium loaf medium crust - 3 eggs (but forgot the Vinegar, ooops)
      next time i'll do a med loaf light crust.
      Tomorrow i'll stop the machine before the last rise, and try it out as bread rolls in the oven

      Just made this bread and it is to die for! Now, I have to decide if it is cheaper than buying GF bread. It sure is better tasting. I was fearful of letting my old bread maker do a second rise, so I just turned it out into a bread pan after the first rise and baked at 375 for 25 minutes and it was perfect. My husband loves it and he is not GF.

      Thank you so much for this bread recipe. It works perfectly in my brand new, bought especially to make this recipe, bread maker.
      I use honey instead of sugar since my son CANNOT have sugar...
      It tastes so good!!!! 🙂
      We feel like we are eating normal artisan bread❤❤❤❤
      I no longer crave bakery foods. I no longer sneak illicit trips to the bakery followed by days of breathing difficulties and other bad, bad, physical consequences.
      My whole family enjoys eating it, even my husband who is technically doing Keto.
      You have colourized my now totally gluten free existence.

      This is D

      I don't actually measure it, I would guestimate about 3 to 3 1/2 tablespoons of honey. Having said that, I'm very ad hoc in my cooking. I use a straight out 500g of GF flour (coles homebrand) and add a little bit more melted butter (rather than oil) and a little bit more water. (instead of milk, I use 3 tablespoons of coconut milk powder with approx. 300mls - 350mls of water).
