Ok ..... I can't rave about this Gluten-Free Chocolate Cake enough! It really is The Best Gluten-Free Chocolate Cake!!
This cake is moist, full of chocolate flavour, only uses one bowl for the cake mixture (love that) and so easy to make...
only 5 really easy steps!
After a little experimenting, I have created the gluten-free chocolate cake that you can whip up quickly when friends or family are coming around or you need to take it for a get-together. It doesn't take long to cook (no waiting around for 50 minutes for this to cook ...only 25 minutes!) AND it stays moist! Yes, I know that gluten-free cakes often don't taste as great the next day...but this one does!! 🙂
So what is the 'special everyday ingredient' I hear you ask??
1 cup of black coffee
yes....
black coffee!!
(I used a decaffeinated one but you could use whatever flavour or strength of coffee you like.)
The coffee gives the gluten-free chocolate cake a full-bodied flavour - without the taste of coffee!
(If you would like a stronger taste of coffee in the cake, simply use a stronger coffee.)
This gluten-free cake recipe uses coconut flour and some almond meal/flour - so no need to worry about gluten-free flour mixes. It is topped with whipped cream with a hint of honey that just goes so well with this chocolate cake.
So here are the easy 5 steps!
The Easy Steps to The Best Gluten Free Chocolate Cake Recipe!
Step 1
Preheat the oven to 180ºC and line a square cake tin with baking paper.
Add to a bowl and whisk!
- 5 eggs
- ½ cup of olive oil
- 1 cup of caster sugar
- 1 teaspoon of vanilla essence
Step 2
Then add the following to the bowl with egg mixture and mix together.
- 1 cup of coconut flour (less 2 tablespoons)
- 2 tablespoons of almond meal/flour
- ½ cup of cocoa powder
- ¾ teaspoon of baking soda
- ¼ teaspoon gluten free baking powder
Step 3
Pour in
- 1 cup of black coffee
...and mix together till smooth.
Step 4
- Pour into the cake tin and bake in the oven for 25 mins or until a toothpick or cake tester is inserted and it comes out clean. Remove the cake from the tin and leave to cool on a cake rack.
Step 5
Cream Topping
- While the cake is cooling, add the cream and honey to a electric mixer and whip the cream until it is thick and fluffy.
- Smooth the cream over the cake and sprinkle over the grated chocolate ....delicious!

- Cream - Simply add cream to an electric mixture and beat till the cream is thick and fluffy and spoon onto the top of the cooled cake.
Oh! just so good!

PS - I keep my cake in an airtight container in the fridge for it to stay moist and delicious!! (...if there is any left!)
