I always have a little laugh when my family asks for the 'tea cake' that doesn't have any 'tea' in it.
By all means have a look at the ingredient list and you will see no 'tea'. This Easy Gluten Free Cinnamon Tea Cake doesn't have tea in it....but is goes perfectly with a fresh pot of tea ...(or coffee).
This Gluten Free Cinnamon Tea Cake is the perfect cake for afternoon tea and goes so well with a side serving of freshly whipped cream!
You know those days when when a piece of cake and a good cup of tea or coffee is the makings of a great day!

Easy Gluten Free Cinnamon Tea Cake
- 1 egg
- 2 tablespoons of coconut oil
- ¼ cup of honey
- 1 teaspoon of vanilla
- 1 ½ cup of almond flour
- 1 teaspoon of cinnamon
- 2 teaspoons of baking powder
- ½ cup of coconut milk
- ½ teaspoon of salt
Crumble topping
- ½ cup of almond flour
- 1 tablespoon of coconut oil
- 1 tablespoon of honey
- 2 teaspoons of cinnamon
How to make Easy Gluten Free Cinnamon Tea Cake
- Preheat oven to 180º Celsius
- In a bowl, add in the coconut oil, vanilla and honey and the egg and whisk together.
- Then add in the almond flour, baking powder, cinnamon and salt and mix.
- Then add in the coconut milk and stir until smooth.
- Pour into a square cake tin that is lined with baking paper.
- For the crumble topping, in another bowl add in the almond flour, coconut oil, honey and cinnamon and mix.
- Using your fingers, drop small amounts on top of the cake.
- Bake for 20 to 25 minutes and carefully take out of the tin to cool on a cake rack.
- It is delicious served on its own or with fluffy cream....perfect! ( Oh! ....and a nice cup of tea!!)

I have never ever left a comment or review of an online recipe in my life, but i was compelled to in this instance because THIS CINNAMON TEACAKE RECIPE IS INCREDIBLE!!!!! Seriously - thank you so much Barb for your creative inspiration - i usually share my baking with friends and family and anyone who will partake, but this one was so gobsmacking that i ate the entire cake myself ha ha!! You can also substitute maple syrup in, and add ginger powder for extra spice. Absolutely divine THANK YOU!
What size aware cake tin should I use ?

I used a 9in cake tin... but you could use a different size and just adjust the time to cook it. A bigger cake tin would make a more shallow cake and cook quicker whereas a smaller tin would make a deeper cake and take a little longer. Just remember to do the toothpick test to know when it is ready.
