There is something so fresh and delicious about Vietnamese Banh Mi. A baguette sandwich that is full of flavours, crusty, fresh and so delicious.
This blend of a French baguette and Vietnamese salad works so well together. Fresh, crunchy with a tang of pickled carrots and the spice of chilli mayonnaise!
My son is probably the biggest fan of Banh Mi. It is probably his 'go to' lunch and the best thing is that it is filling ...the main criteria for a for teenage boy - it must taste good and it be filling!Β
I actually think he is a little addicted to them... but when I think about it, having a delicious, crunchy, salad roll for lunch everyday... no harm in that! π

Tips to making Easy Chicken Banh Mi

Tip Number 1 - Chicken
For all the busy people out there... simply buying a roasted takeaway chicken is best way to start the Banh Mi experience. It also works well if you have leftover roasted chicken.
You could also use leftover shredded pork or sliced ham.
Tip Number 2 - Pickled Carrots
The carrot mixture is really what gives Banh Mi that unique flavour.
That is done by slightly pickling the carrots. The vinegar starts to soften the carrots and give it that extra boost of flavour!
Tip Number 3 - The Baguette
What makes Banh Mi so good is the crunch of the roll... so make sure you have fresh baguettes that are slightly toasted.
You can make these Chicken Banh Mi, gluten free, simply by having gluten free chicken, using gluten free soy sauce and using gluten free rolls. If you need a gluten free baguette, click here.
Ok.. so if you don't have fresh baguettes....don't worry ... because these combinations of ingredients and flavours are ideal as aΒ Chicken Banh Mi Salad or a Banh Mi Noodle Bowl or even a Banh Mi Bruschetta!
How to make Easy Chicken Banh Mi Baguette Sandwich
The first step is making the pickled carrots!
Pickled Carrots
- β cup of white vinegar
- ΒΌ cup of caster sugar
- pinch salt
- 1 cup of shredded/grated carrots
How to make the pickled carrots
- In a bowl add in the vinegar, ΒΌ cup of sugar and salt and stir until sugar dissolves.
- Then add in the carrots and stir to combine and leave it for 15 mins or so.

and then the spicy mayonnaise...
Mayonnaise mixture
- ΒΌ cup of light mayonnaise
- 1-2 teaspoons of asian chilli sauce or sweet chilli sauce
- Β½ teaspoon of gluten free soy sauce
- ΒΌ teaspoon of sugar
How to make the Mayonnaise mixture
- In another bowl, add in the mayonnaise, asian chilli sauce, gf soy sauce and ΒΌ teaspoon of sugar and stir to combine.
Bringing it all together...
- Toast the baguettes in the oven until lightly warm and crunchy
- Spread over the mayonnaise on both side of the toasted baguette
- Place a layer of the sliced or shredded chicken,
- Drain the carrots and arrange over the chicken,
- Top with cucumber slices, chilli/capsicum and with coriander (spring onions optional)
