Easy Chicken Banh Mi
The easy way to make a fresh, crunchy french baguette, filled with pickled carrots, chilli mayonnaise and roasted chicken! A delicious lunch, snack or even easy dinner.
  • 1 bread baguette or Gluten Free Baguette
  • sliced or shredded chicken from roasted chicken
  • Ingredients for Pickled Carrots
  • ⅓ cup of white vinegar
  • ¼ cup of caster sugar
  • pinch salt
  • 1 cup of shredded/grated carrots
  • How to make Pickled Carrots
  • In a bowl add in the vinegar, ¼ cup of sugar and salt and stir until sugar dissolves.
  • Then add in the carrots and stir to combine and leave it for 15 mins or so.
  • Ingredients for Chilli Mayonnaise
  • ¼ cup of light mayonnaise
  • 1-2 teaspoons of asian chilli sauce or sweet chilli sauce
  • ½ teaspoon of gluten free soy sauce
  • ¼ teaspoon of sugar
  • How to make Mayonnaise
  • In another bowl, add in the mayonnaise, asian chilli sauce, gf soy sauce and ¼ teaspoon of sugar and stir to combine
  • slices of a cucumber - with seeds removed
  • coriander/cilantro to top
  • chilli/capsicum
  1. Bringing it all together...
  2. Toast the baguettes in the oven until lightly warm and crunchy
  3. Spread over the mayonnaise on both side of the toasted baguette
  4. Place a layer of the sliced or shredded chicken,
  5. Drain the carrots and arrange over the chicken,
  6. Top with cucumber slices, chilli/capsicum and with coriander (spring onions optional)
