Gluten Free Rocky Road!!
  • 1 block of good quality Dark Melting Chocolate (200g) (I use Plaistowe Dark Chocolate)
  • ½ cup of gluten free jellies - chopped
  • 1 cup of gluten free marshmallows
  • ½ cup of desiccated coconut
  • ½ cup crushed peanuts and some extra to sprinkle on top.
  1. Cut up the marshmallows and jellies into smaller pieces.
  2. In another bowl melt the block of chocolate. I melt the chocolate by breaking the chocolate into smaller pieces, putting it into a microwave bowl, and melting it for 30 seconds then stirring it - so pieces of chocolate don't stick and then melting it again for 30 seconds and then stirring. I repeat this till the chocolate is smooth and runny. Please be careful as the chocolate and bowl is hot!
  3. Add to the melted chocolate the crushed peanuts, coconut, marshmallows and jellies,
  4. Mixed together to make sure the chocolate covers all the pieces of marshmallows and jellies.
  5. Place the chocolate mixture into a tray, lined with baking paper and sprinkle with some peanuts  and place in the fridge till the chocolate goes hard.
  6. You will have to resist while it is in the fridge! ;-)
