This recipe for Gluten Free Gingerbread Men is full of flavour, they are easy to make and the perfect addition to your Christmas treats!
There is something special about Gingerbread Men at Christmas (or should I be calling them Gingerbread people?). Just looking at them gives you the feeling of the holidays!
We always make Gingerbread Men as a family... everyone has a turn at rolling the mixture, cutting out their shapes and of course they get to decorate their own (and somehow each gingerbread takes on a character all of their own...so cute! )
So this is a really easy Gluten Free Gingerbread recipe. Easy to make, easy to roll and quick to bake...
...and they taste delicious!!
This year we decided to give them a little touch of colour with bright pink buttons...(we gave them a little touch of Hawaii...:-))
Tip - We use Golden Syrup or Maple Syrup in our mixture, as we like the lighter flavour of gingerbread. If you prefer a fuller, deeper flavour you should use dark molasses. Always use dark brown sugar if you are using golden syrup or maple syrup.
Ingredients for Gluten Free Gingerbread Men
- 1 cup soft butter
- ¼ cup of golden syrup
- ¾ cup dark brown sugar
- 2 eggs
- 1½ cups tapioca flour (arrowroot)
- 2 cups rice flour
- 2 teaspoons cinnamon
- 1teaspoon ginger
- ¼ teaspoon cloves
- ½ teaspoon nutmeg
- ½ teaspoon real salt
- 2 teaspoons baking soda
- 2 teaspoons xanthan gum
- Preheat the oven at a moderate temperature 180ºC
- In a mixing bowl, add in the butter, brown sugar and golden syrup and cream together.
- Add in the eggs and mix.
- In another bowl add in the tapioca flour, rice flour, cinnamon, ginger, nutmeg, cloves, salt, baking soda, xanthan gum and mix together.
- Add the flour to the butter mixture ....
Tip - Just add in one cup at a time and mix as the flour mixture is very fine.
- Place onto a piece of baking paper, wrap and place in the fridge and let it chill for half an hour. This lets the butter become firmer and then it is easier to cut the shapes.
- Add some rice flour to a sheet of baking paper and place another sheet of baking paper on top and roll out the mixture to the thickness you like.
- Cut your cookies and place on baking paper lined trays.
- Bake for around 8 minutes in a moderate oven. (don't leave them in for too long, or so they go too brown otherwise they will be dry)
- Let them cool on the tray and then decorate!!
