In a mixing bowl, add in the butter, brown sugar and golden syrup and cream together.
Add in the eggs and mix
In another bowl add in the tapioca flour, rice flour, cinnamon, ginger, nutmeg, cloves, salt, baking soda, xanthan gum and mix together.
Add the flour to the butter mixture - Tip - Just add in one cup at a time and mix as the flour mixture is very fine.
Place on baking paper and wrap it and place in the fridge and let it chill for ½ an hour. This lets the butter become firmer and then it is easier to cut the shapes.
Add some rice flour to a sheet of baking paper and place another sheet of baking paper on top and roll out the mixture to the thickness you like.
Cut your cookies and place on baking paper lined trays.
Bake for about 8-10 minutes
Let them cool on the tray and then decorate!! :-)
