The halloumi cheese (firm and slightly springy cheese) really gives these fritters a wonderful flavour and the best part about this recipe is that it is so versatile that you can make up a batch or two and they are perfect for people who are coeliac, on a gluten free diet, are wheat freeΒ or even people who have no allergies!

The Tips to Making the Best Halloumi, Zucchini and Bacon Fritters!
Tip Number 1
The tip with this recipe is to make sure that you squeeze the excess liquid from the zucchinis. That way the zucchini won't make the fritters soggy and fall apart!
To do this, simply use a clean tea towel and place the zucchini on in and wrap the tea towel so to squeeze out the excess liquid from the zucchini. You will surprised just how much liquid comes out! π
Tip Number 2
There is no need to add extra salt to this recipe as the halloumi cheese is already quite salty. Simply add a good dose of black cracked pepper.
Tip Number 3
These fritters are so versatile that they can be served warm topped with yoghurt, cold from the fridge for lunch boxes and snacks but also for breakfast topped with grilled tomatoes or even a poached egg (...or both! π)
How to make Easy Halloumi, Zucchini and Bacon Fritters (GF)
Step 1 - Grate the zucchinis and in a tea towel, squeeze out the excess liquid and in a large bowl, add in the grated zucchini, grated halloumi, 1 cup of almond meal, bacon, the spring onions, cracked black pepper and mix. Then add in the two eggs and mix.
Step 2 - In a frying pan, add in the coconut oil and heat on a low temperature and then take a handful of the mixture and flatten them into fritters and add to the frypan. Increase the heat to medium and cook the fritters on both sides until they are golden and cooked through.
Step 3 - Take the fritters out of the frypan and rest them on paper towel. Serve these fritters warm from the frypan and topped with greek yoghurt and sliced spring onions. Or keep them in the fridge to go into lunch boxes or for snacks!
The Recipe for Easy Halloumi, Zucchini and Bacon Fritters (Gluten Free)
- 2 zucchinis - grated and squeezed the excess moisture out
- 1 cup of grated halloumi
- 2 tablespoons of diced bacon
- 1 cup of almond meal
- 2 eggs
- 2 spring onions - chopped (keep some to serve with the fritters)
- cracked black pepper
- coconut oil or olive oil for cooking the fritters
- greek yoghurt to top
- Grate the zucchinis and in a tea towel, squeeze out the excess liquid.
- In a large bowl add in the grated zucchini, grated halloumi, 1 cup of almond meal, bacon, the spring onions, cracked black pepper and mix. Then add in the two eggs and mix.
