The recipe for delicious and easy Halloumi, Zucchini and Bacon Fritters (Gluten Free) perfect for lunch boxes, breakfast, snacks or dinner! Makes 8 large fritters

Ingredients
  • 2 zucchinis - grated and squeezed the excess moisture out
  • 1 cup of grated halloumi
  • 2 tablespoons of diced bacon
  • 1 cup of almond meal
  • 2 eggs
  • 2 spring onions - chopped (keep some to serve with the fritters)
  • cracked black pepper
  • coconut oil or olive oil for cooking the fritters
  • greek yoghurt to top
Instructions
  1. Grate the zucchinis and in a tea towel, squeeze out the excess liquid.
  2. In a large bowl add in the grated zucchini, grated halloumi, 1 cup of almond meal, bacon, the spring onions, cracked black pepper and mix. Then add in the two eggs and mix.
  3. In a frying pan, add in the coconut oil and heat on a low temperature.
  4. Take a handful of the mixture and flatten them into fritters and add to the frypan, then increase the heat to medium and cook the fritters on both sides until they are golden and cooked through.
  5. Take out of the frypan and rest on paper towel.
  6. Serve these fritters warm from the frypan and topped with greek yoghurt and sliced spring onions.
  7. Or keep them in the fridge to go into lunch boxes or for snacks.
  8. They are also wonderful served for breakfast with grilled tomatoes on top!
