This Chorizo and Zucchini Paella is THE easiest meal to make when you get home from work and don't really feel like cooking. I mean... really easy!
....all in one pot!!
Paella is a Spanish rice dish that usually has chicken, seafood and saffron and is cooked in a large shallow pan.
I recently had Paella at the markets and the smell of this delicious meal wafted all the way around the markets the whole morning. Β There was no way that anyone wasn't having this meal at the markets...including me!
So.... of course, I needed to make this at home - the easy way and with ingredients that I had on hand - chorizo, zucchini and fetta....and it had to be gluten-free too!
Adding the chorizo to the easy paella makes this dish all the more delicious.!
What is Chorizo?Β
Chorizo is a type of pork sausage that is fermented, cured and smokedΒ and it is seasoned with smoked paprika or red peppers. ChorizoΒ is perfect in this dish because it adds a smokey flavour and gives the beautiful deep red colour.
The Tip to making Easy Chorizo and Zucchini Paella
The tip here is to fry the chorizo in the saucepan, so it flavours the oil and then chorizo goes crispy ...and so delicious.
This is a warm, hearty meal, that smells wonderful whenΒ it is cooking and tastes absolutely fantastic !
How to make Chorizo and Zucchini Paella
- Slice up a chorizo, thinly (if you don't have chorizo, you could use diced bacon)
- In a saucepan add a little bit of olive oil and cook onion, garlic, ginger and Chorizo and cook for 5 minutes (or until chorizo is a little crispy).
- Add in 1 cup of rice, 2 cups of chicken stock and 1 can of tomato
- Bring to boil and then cook on low for around 15 mins, while stirring every now and then (so not to stick to the base of the saucepan)
- Top withΒ chopped feta and coriander and serve!
This Easy Chorizo and Zucchini Paella makes the perfect everyday meal - quick, delicious and only one cooking pot to wash up (win-win! πΒ ).
...and it is even delicious as leftovers for lunch the next day!

- 1 chorizo sliced
- 1 zucchini - diced
- 1 teaspoon of minced garlic
- 1 teaspoon of minced ginger

- 1 cup of Basmati Rice
- 2 cups of chicken stock- gluten free

Oh my goodness, I'm so excited about this recipe! I love Paella but I don't eat the seafood in it and I find it a real faff to make it from scratch, stirring for hours.
