Easy Chorizo and Zucchini Paella

This Easy Chorizo and Zucchini Paella is a delicious, hearty meal, that is full of flavour and taste, it is gluten free and it is all cooked in one pot!!

  • 1 chorizo sliced
  • 1 zucchini - diced
  • 1 teaspoon of minced garlic
  • 1 teaspoon of minced ginger
  • 1 onion-diced
  • 1 cup of Basmati Rice
  • 2 cups of chicken stock- gluten free
  • 1 can of tinned tomato
  • Feta cheese and coriander to top just before serving
  1. Slice up a Chorizo (you could use diced bacon)
  2. In a saucepan add a little bit of olive oil and cook onion, garlic, ginger and Chorizo and cook for 5 minutes (or until Chorizo is a little crispy).
  3. Add in 1 cup of rice, 2 cups of chicken stock and 1 can of tomato
  4. Bring to boil and then cook on low for around 15 mins, while stirring every now and then (so not to stick)
  5. Add chopped Feta and Coriander and serve!
