If you ask my family, on the weekend there is nothing better than spicy, hot wedges from the oven that areΒ then dunked into aΒ creamy dip and devoured.
We usually have this little snack sitting in the sunroom talking about funny stories from the week....you know the stories that you can really only share with your family...embarrassing ones, weird ones, and just plainΒ sillyΒ ones. π
I am not sure what is about sharing wedges that brings people closer but I do know that these Sumac Spicy Wedges have some magical powers about getting a good conversation going.
These crispy wedges have a tangy, lemony flavour with a little hint of chilli and they go perfectly with yoghurt or sour cream dip that is sprinkled with Sumac!
Oh! they are gluten-free and vegetarian too!
But you are probably thinking....what is Sumac?Β
What is Sumac?
Sumac is a spice that has a tangy, tart, lemony (citrusy) flavour that is often used in Mediterranean and Middle Eastern cooking. It has a beautiful colour as it is dried, deep red berriesΒ that areΒ ground into a coarse powder and just a small sprinkle adds a beautiful touch of colour. It is high in vitamin C, A and antioxidants.
It is becoming more popular because of its citrusy flavour but it is also used like salt and acts as a flavour enhancer. It is used to sprinkle over chicken salad, vegetables, as a rub or marinade and mixed through hummus.
The best part aboutΒ this recipe is that is easy, taste delicious and is just a little way to make wedges exotic!
Ingredients for Sumac Spiced Wedges
- 6Β sweet potatoes or white potatoes -Β cut into wedges
- 2 teaspoons of Sumac
- 2 teaspoons chilli flakes (you can add in as little or as much as you like depending on your love for chilli)
- 2 teaspoonsΒ of ground cumin
- 2 tablespoonsΒ thyme leaves, roughly chopped
- 2 tablespoonsΒ rosemary, roughly chopped
- 3 garlic cloves
- zest and juice 1Β lemon
- 3 tablespoonsΒ olive oil
How to make Sumac Spiced Wedges
- Preheat the oven to 200ΒΊC (hot oven)
- Using a pestle and mortar, crushΒ together the spices, herbs, garlic and theΒ seasoning.
- Spoon into a large bowl and stir in the lemon zest and juice, and the oil.
- Add the potatoes and using your hand mix the potatoes and the spices so all the wedges are covered.
- Place the potatoes on an oven tray lined with baking paper and bake for 30β40 mins until the wedges are crisp on the outside and soft in the middle.
It is amazing how one little spice can make all the difference to these wedges!
Tip - We also use SumacΒ tossed over popcorn with a little bit of salt, and it gives the flavour of salt and vinegar popcorn....delicious!

Za'atar
- ΒΌ cup Sumac
- 2 tablespoons thyme
- 1 tablespoon sesame seeds- roasted
- 2 tablespoons marjoram
- 2 tablespoons oregano
- 1 teaspoon sea salt
How to make Za'atar
Simply crush all the ingredients in a mortar and pestle. The rub-on poultry, sprinkle on vegetables, sweet potatoes and even popcorn...delicious! π
