This easy recipe for Gluten Free San Choy Bau is for when you want something quick, healthy and delicious and it is the perfect "finger food"!
So there are nights when you just feel like an easy dinner whileΒ collapsing on the sofa andΒ watching television. Some nights this is the best place to eatΒ dinner and some 'finger food' is the way to go.
On nights like these we still want a healthy dinner and turn to Gluten Free San Choy Bau made with chicken. Now I know this dish is called lots of different names and has lots of different spellings - due to the translation to English (including as Sang Chow Bow,Β Sung Choi Bao) but basically it is minced chicken and vegetables wrapped in lettuce leaves. ...but trust me... when you say to your family we are having 'San Choy Bau'...it sounds much better than chicken in lettuce leaves. π
We love having San Choy BauΒ because it has the delicious flavour ofΒ caramelised chicken with a light, fresh, crisp taste of lettuce. ...Oh and my family thinks it is just great not having to use knives and forks! Β I think they think there will be less washing up !?!... Β :-/Β
So here is an easy way to make Gluten Free San Choy Bau...
Recipe for Gluten Free San Choy Bau
The ingredients you need...
- 500 g of chicken mince
- 2 tablespoons of rice bran oil
- 2 teaspoons of minced garlic
- 2 teaspoons of minced ginger
- 2 spring onions or chives - sliced thinly
- 1 onion - diced
- 4 snow peas - sliced thinly
- 1 small carrot - diced finely
- 6-8 mushrooms - sliced
- 2 tablespoons of Chinese cooking wine (or water)
- ΒΌ cup of gluten free soy sauce (more if you like it a little saltier)
- 2 tablespoons of honey (more if you like it a little sweeter)
- 1 tablespoon of arrowroot powder (or cornflour)
- ΒΌ cup of water
- 1 Iceberg lettuce
- (you can add in other ingredients such as corn, water chestnuts, bamboo shoots, bean sprouts etc.)
Method
- Using the iceberg lettuce, cut out the core of the lettuce, so the remove the hard, white stalk of the lettuce. Then remove the leaves carefully and place them in cold water while preparing the chicken.
Tip - To do this easily push the head of lettuce together with two hands and then turn it and push your hands togetherΒ again. This helps release the lettuce leaves so you can pull it apart.
- In a fry pan, add in the rice bran oil and let it heat up and add in the garlic, ginger, some of the spring onion, onions and carrot and cook while stirring until the onion starts to turn translucent.
- Add in the chicken mince and using a wooden spoon break it up into smaller pieces and cook until the chicken is just about cooked
- Add in the Chinese Rice Wine and stir till it goes slightly caramelised
- Add in the soy sauce and honey and store, then add in the mushrooms and snow peas
- In another small bowl add in the arrowroot and water and stir and then pour into the chicken mixture. This will help it thicken. Make sure you keep stirring so it doesn't stick on the base of the frypan.
- Take the lettuce leaves out of the water and let them drain.
- Then spoon in the mixture into the lettuce lettuce, top with the remaining spring onions, roll up and enjoy!!
