A really easy way to bake Gluten Free Banana Bread! It's so delicious, full of flavour and it can be eaten on its own or topped with lashings of butter!
We love bananas in my home...in muffins, cakes, on their own, as banana splits and especially as Banana Bread. This Gluten Free Banana Bread is really easy to make, let me say that again...really easy!
Sunday mornings are my baking time and this when I can bake to my heart's content ...Oh! and get some treats ready for the family and the working week.
Nothing better than the smell of baking filling up my home and ...of course, having the afternoon to laze around and try some of the baked treats.
This Gluten Free Banana Bread recipe uses just a touch of coconut flour which gives the bread a delicious flavour that is not dry ....and when combined with the golden syrup (or you could use maple syrup) and the bananas....well, it is just delicious!!

Recipe for Gluten Free Banana Bread
See below for the easy steps.....
- 3 ripe Bananas - mashed
- ¼ cup of butter - melted
- ¼ cup of golden syrup
- 1 tablespoon of vanilla essence
- 2 eggs
- ¼ cup of coconut flour
- 1 cup of gluten free self raising flour - I use Orgran Gluten Free Self Raising flour
- 1½ teaspoons of baking powder
- ½ teaspoon of cinnamon/nutmeg
- Preheat the oven to a moderate temp - (180ºC or 350F)
- In a large bowl, add in the wet ingredients including the eggs, melted butter, golden syrup, vanilla and mashed banana - mix well
- Then add in the coconut flour, self raising gluten free flour, baking powder, and cinnamon. (*If you are not using Orgran Gluten Free Self Raising Flour add in an extra teaspoon of baking powder)
- Mix well with a wooden spoon until smooth
- Pour into a greased loaf tin and bake in the oven for 45 mins or until a skewer inserted comes out clean,

Mix
- Mix well with a wooden spoon until smooth.
Bake
- Pour into a loaf tin (that is lined with baking paper) and bake in the oven for 45mins or until a skewer inserted comes out clean.
