A really easy way to bake Gluten Free Banana Bread... delicious and full of flavour. Goes perfectly with lashings of butter!
Recipe type: Banana Bread
  • 3 ripe Bananas - mashed
  • ¼ cup of butter - melted
  • ¼ cup of golden syrup
  • 1 tablespoon of vanilla essence
  • 2 eggs
  • ¼ cup of coconut flour
  • 1 cup of gluten free self raising flour - I use Orgran Gluten Free Self Raising flour
  • 1½ teaspoons of baking powder
  • ½ teaspoon of cinnamon/nutmeg
  1. Preheat the oven to a moderate temp - (180ÂșC or 350F)
  2. In a large bowl, add in the wet ingredients including the eggs, melted butter, golden syrup, vanilla and mashed banana - mix well
  3. Then add in the coconut flour, self raising gluten free flour, baking powder, and cinnamon. (*If you are not using Orgran Gluten Free Self Raising Flour add in an extra teaspoon of baking powder)
  4. Mix well with a wooden spoon until smooth
  5. Pour into a greased loaf tin and bake in the oven for 45 mins or until a skewer inserted comes out clean,
