All the tips to cooking Chicken Mignons so that they are delicious, tasty, succulent and easy to make!
Chicken Mignons is one of our family favourite meals, all year round, because it is delicious moist chicken thighs, wrapped in smokey bacon, with a delicious garlic butter centre....even just writing this is making my mouth water.
We love this recipe because the bacon is crispy on the top and the chicken is moist, succulent and so tasty!
I am sure that most people know this recipe but I have written this one down, (a request from my boys) so that when my teenage boys have left our home and surviving in the 'big' world on their own, they can cook one of their favourite home-cooked meals.
(Or when I come to visit, the food is edible... 😉)
There are some tips to make to Chicken Mignons that make all the difference.
To make it easy I have added the tips below each of the following photos.
The Tips to Delicious Chicken Mignons!
Tip 1
Lay one of the chicken thigh fillets between two sheets of baking paper and using a kitchen mallet, pound the chicken to make it thinner. Make sure you only use the smooth side of the mallet otherwise you will make a mess of the paper and chicken.
Tip 2
On the inside of the flattened chicken thigh, lay down some slices of onion, capsicum, garlic and a slice of butter. You can add some mustard to give it a little more flavour.
I make up garlic butter by simply mixing the crushed garlic into soft butter, wrapping it in cling (plastic) wrap in the shape of a long roll and then popping it back in the fridge to set. It is then easy to slice some of the garlic butter. You can also add herbs to garlic and butter... the perfect way to make this spread for crispy garlic bread.
Tip 3
Roll up the chicken thigh and place it onto a long piece of bacon rasher, and fasten it together with two toothpicks.
Make sure you leave enough of the toothpick out so that people can see them and can take them out before eating them. You don't want to give them a hidden surprise of 'wood' in their chicken, while they are eating it.
Tip 4
In an oven baking dish, lay down some baking paper (which makes it so much easier to clean the baking dish later) and place it in the chicken mignons. Place a knob of butter on top of each one. I place it on the toothpick to keep it on the top.
The BEST tip is to then fill the dish with chicken stock, up to halfway up the chicken mignons. This way when the chicken cooks, it is cooking in chicken stock, which makes the chicken very moist and succulent.
Tip 5
Bake in a pre-heated moderate oven (180ºC or 350F), till the bacon on the top is crispy and golden brown and the chicken is cooked through. This will depend on how thick your chicken mignon are and how many are in the baking dish.
Chicken Mignons are great for when you have friends or family for dinner because you can prepare them beforehand, cook them while your visitors are there, they look impressive and they taste amazing!!
We serve them with a fresh salad and crispy smashed baked potatoes!
Delicious Chicken Mignons!
Ingredients
- 6 chicken thigh fillets
- 6 long rashers of smokey bacon rashers
- 2 teaspoons of crushed garlic
- ¼ of a capsicum
- ¼ on an onion
- 125 g butter - chopped
- 2 teaspoons of mustard
- 3 cups of chicken stock I use a gluten free one

- Kitchen mallet
Instructions

- Bake in a pre-heated moderate oven, 180ºC or 350F till the bacon on the top is crispy and golden brown and the chicken is cooked through. This will depend on how thick your chicken mignon are and how many are in the baking dish.
These Chicken Mignons are delicious, succulent and so tasty!
