    Almond and Coconut Gluten Free Rice Pudding

    So there are times when you need a sweet dessert...that doesn't take too long and is the perfect comfort food.

    This gluten free Almond and Coconut Rice Pudding is made on the stove top and it is so easy to make...you will be tempted to make it often!
    There are 2 tips to making this delicious and creamy rice pudding....

    Almond and Coconut Gluten Free Rice Pudding recipe!

    Tip Number 1

    The first tip is to making this  rice pudding is to use almond milk!

    Almond milk is great for people who can't have dairy...but it also tastes great and adds a delicious

    almond flavour to the rice pudding.

    Tip Number 2

    The second tip is using arborio rice or risotto rice. This creates a soft, fluffy and heavenly rice pudding.

    With a sprinkling of coconut, a dash of cinnamon, a swirl of honey and topped with fresh banana, this rice pudding is perfect!

    We like our almond and coconut rice pudding ....sticky! ....
    ...so it sticks to the spoon if you hold it upside down.and we do this by slowly simmering it till the all the milk is absorbed.

    You may prefer it not do sticky, retain a little more liquid, so just take it off the heat, when the rice is tender and some milk remains. It is also best to make sure you stir the almond milk and rice while it is boiling....so that way it doesn't stick.

    Perfect for dessert...or even for breakfast😉

    How to make Almond and Coconut Gluten Free Rice Pudding!

    • Place 1l of almond milk and 1T of vanilla in a saucepan with ¾ cup of arborio rice. Stir to combine.
    • Bring to the boil and add ½ of the coconut and reduce heat and gently simmer for about 15 minutes, stirring occasionally, until rice is tender.
    • If you prefer it a little sweet, stir in the honey.
    • When the liquid has been absorbed to your liking, take of the heat and spoon into bowls
    • Sprinkle with cinnamon, coconut and arrange sliced bananas over the top and drizzle with honey!

    Ingredients
    • 1 litre almond milk ( I use SoGood Almond Milk)
    • ¾ cup arborio rice (I use Riviana medium grain rice or risotto rice)
    • 1 tablespoon of vanilla extract (or you could use 2 tablespoons honey)
    • ½ cup of desiccated coconut
    • 2 tablespoons honey if you prefer a sweet rice pudding)
    • cinnamon to sprinkle on top
    • sliced banana and honey to layer on top
    Instructions
    1. Place milk and vanilla in a saucepan with ¾ cup of rice. Stir to combine.
