The warm and comforting recipe for Easy Almond and Coconut Gluten Free Rice Pudding!
So there are times when you need a sweet dessert...that doesn't take too long and is the perfect comfort food.
Tip Number 1
Almond milk is great for people who can't have dairy...but it also tastes great and adds a delicious
almond flavour to the rice pudding.
Tip Number 2
The second tip is using arborio rice or risotto rice. This creates a soft, fluffy and heavenly rice pudding.
With a sprinkling of coconut, a dash of cinnamon, a swirl of honey and topped with fresh banana, this rice pudding is perfect!
You may prefer it not do sticky, retain a little more liquid, so just take it off the heat, when the rice is tender and some milk remains. It is also best to make sure you stir the almond milk and rice while it is boiling....so that way it doesn't stick.
How to make Almond and Coconut Gluten Free Rice Pudding!
- Place 1l of almond milk and 1T of vanilla in a saucepan with ΒΎ cup of arborio rice. Stir to combine.
- Bring to the boil and add Β½ of the coconut and reduce heat and gently simmer for about 15 minutes, stirring occasionally, until rice is tender.
- If you prefer it a little sweet, stir in the honey.
- When the liquid has been absorbed to your liking, take of the heat and spoon into bowls
- Sprinkle with cinnamon, coconut and arrange sliced bananas over the top and drizzle with honey!
Recipe for Almond and Coconut Rice Pudding!
- 1 litre almond milk ( I use SoGood Almond Milk)
- ¾ cup arborio rice (I use Riviana medium grain rice or risotto rice)
- 1 tablespoon of vanilla extract (or you could use 2 tablespoons honey)
- ½ cup of desiccated coconut
- 2 tablespoons honey if you prefer a sweet rice pudding)
- cinnamon to sprinkle on top
- sliced banana and honey to layer on top
- Place milk and vanilla in a saucepan with ¾ cup of rice. Stir to combine.
