Easy... Almond and Coconut Gluten Free Rice Pudding!!

- 1 litre almond milk ( I use SoGood Almond Milk)
- ¾ cup arborio rice (I use Riviana medium grain rice or risotto rice)
- 1 tablespoon of vanilla extract (or you could use 2 tablespoons honey)
- ½ cup of desiccated coconut
- 2 tablespoons honey if you prefer a sweet rice pudding)
- cinnamon to sprinkle on top
- sliced banana and honey to layer on top
- Place milk and vanilla in a saucepan with ¾ cup of rice. Stir to combine.
- Bring to the boil and add ½ of the coconut and reduce heat and gently simmer for about 15 minutes, stirring occasionally, until rice is tender.
- If you prefer it a little sweet, stir in the honey.
- When the liquid has been absorbed to your liking, take of the heat and spoon into bowls
- Sprinkle with cinnamon, coconut and arrange sliced bananas over the top and drizzle with honey!
