Easy... Almond and Coconut Gluten Free Rice Pudding!!
The warm and comforting recipe for Easy Almond and Coconut Gluten Free Rice Pudding!
  • 1 litre almond milk ( I use SoGood Almond Milk)
  • ¾ cup arborio rice (I use Riviana medium grain rice or risotto rice)
  • 1 tablespoon of vanilla extract (or you could use 2 tablespoons honey)
  • ½ cup of desiccated coconut
  • 2 tablespoons honey if you prefer a sweet rice pudding)
  • cinnamon to sprinkle on top
  • sliced banana and honey to layer on top
  1. Place milk and vanilla in a saucepan with ¾ cup of rice. Stir to combine.
  2. Bring to the boil and add ½ of the coconut and reduce heat and gently simmer for about 15 minutes, stirring occasionally, until rice is tender.
  3. If you prefer it a little sweet, stir in the honey.
  4. When the liquid has been absorbed to your liking, take of the heat and spoon into bowls
  5. Sprinkle with cinnamon, coconut and arrange sliced bananas over the top and drizzle with honey!
