    Easy Everyday Meal - Chicken and Corn Koftas

    In my home, when my hungry family asks 'what for dinner?'.... I reply with Chicken and Corn Koftas....and they spend the rest of the night  saying...
    Are we having"cough, cough....tas"! 
    (...one of those jokes where you have to be there)

    Chicken and Corn Koftas recipe!

    It is a running joke in our house...but this recipe is fantastic!
     
    I have to be honest and tell you I do cheat just a little bit.
    Just between you and me, I never really have success of cooking with skewers on the grill. I do soak the skewers but some how one part always burns more that the other.
    ...and black, crusty sticks in you dinner is not a good look. 😉
     
    So, I cook the Koftas on the grill first...and then thread through the skewers.
    No-one is ever the wiser.
    They just love food on a stick! 

    Gluten Free Chicken and Corn Koftas recipe
     
     
    So, here is the easy recipe for Chicken and Corn Koftas.
    I serve them with Moroccan Quinoa...healthy with vegetables and a zing of lime or lemon!

    (Need the recipe for the Moroccan Quinoa with Roasted Vegetables!!...Great as a side dish or even just on its own!)
     

    Recipe for Chicken and Corn Koftas

    Chicken and Corn Koftas - Gluten Free

    Ingredients
    • 500g chicken mince
    • 1 onion - diced
    • 2 corncobs - (I use a tin of corn and place them in a frypan, sprinkle with paprika and cook until slightly golden)
    • ½ teaspoon of mince garlic
    • 2 teaspoons of cumin powder
    • 1 teaspoon of smoked paprika
    • ½ teaspoon of chilli powder
    • 1 cup of gluten free breadcrumbs
    • 1 egg lightly whisked
    • a handful of coriander - chopped
    • ground black pepper
    • juice of a lime
    Instructions
    1. In a bowl add the cooked corn kernels, onion, garlic, cumin, paprika, chilli and chicken mince and mix together to combine well.
    2. Add the egg, breadcrumbs, coriander, pepper and mix throughly.
    3. Put some olive oil on your hands and on the grill plate. Take smalls handfuls and shape into a cylinder shape. Place them on a plate.
    4. Heat up the grill plate and then reduce the heat to half. Place the Koftas on the grill plate and cook on all sides until cooked through.
    5. While they are cooking, squeeze over some lime juice
    6. Slide them onto skewers 😉 and serve with greek yoghurt, coriander and sweet chilli sauce.

    This recipe is versatile and if making them for a group of people at a bbq or for dinner,  you could always make some gluten-free and some made with wheat. Simply substitute the gluten-free bread crumbs for bread crumbs made from wheat flour bread.

    Cooking Chicken and Corn Koftas on a grill plate
     
     
    The Chicken and Corn Koftas can be cooked on a grill plate in your kitchen, as it gives them a rustic look with the lines from the grill plate. You could also cook them on a BBQ or kettle BBQ and also in a frypan if you are ok without 'the lines' 🙂
     
     
    These Chicken and Corn Koftas go perfectly with greek yoghurt or sour cream, sweet chilli sauce and a good squeeze of lime juice!

    This really is an easy everyday meal.....and it looks just a bit 'fancy ',  tastes wonderful and is healthy!
