Crispy homemade wedges, topped with rosemary and sea salt...crispy on the outside and soft in the middle! Β All the tips to making these at home!
Often these wedges come as a side serve to a meal...but I am really happy to indulge in them on their own...savour their taste, not confuse them with another meal.
Yes...this makes me a very easy person to please when going out. I don't need fancy meals...happy with the wedges. π
There is, of course, a couple of tips to get these just right...especially when they are home made and baked in the oven and not in a deep fryer.
(**See below for the tips)
...and they go perfectly with my homemade Tomato Relish!!
The Steps and Tips to Crispy Rosemary and Sea Salt Wedges
- Preheat oven to a 180ΒΊC or a moderate oven.
Tip No 1 - Place an oven tray in the oven with the oil, cubed butter, shredded rosemary (fresh rosemary works the best) and heat it.
- While the oil is heating, prepare the wedges.
- Cut the base off the potato so it stands up.
Tip No 2 - Using an apple corer, slice the potatoes to make wedges (I got mine from Ikea)
Tip No 3 - Place them into a microwave bowl and cook for 5 mins.
- Take them out of the microwave bowl and place them onto a paper towel to dry
Tip No 4 **Careful!- Remove the tray with oil from the oven and slide on the wedges. They should sizzle so that way the wedges won't stick to the tray!
- Carefully stir to cover the wedges with the oil and butter mixture.
- Add some garlic and sprinkle generously with rosemary.
- Bake them for a good 30 mins.
Tip No 5Β - After 20 mins, I turn the wedges and also I turn my oven up (to a hot oven, so the wedges start to go crispy).
- They may need a few minutes longer depending on the type of potatoes you use.
- Remove them when they are golden brown, (with some of them having dark golden parts...yes they are the best bits!)
- I place the wedges onto paper towel to soak up the excess oil.
- I then give them another sprinkling of fresh rosemary and then a good dose of sea salt.
These wedges are so delicious and 'moreish'...especially for homemade ones!!
and dipped in the Homemade Tomato Relish...mmmmmm! π Β

Oh my gosh these look so good. So does the tomato relish. Are you from the UK? I ask because we lived there for a year and they had the best potatoes (we would call them fries) and yours look very much like them. Can't wait to make them! (found you on Cook it Craft it!)

I make home made steak fries like these, and we love them. I use a Weber Grill seasoning for steak, it has Rosemary and Sea Salt, plus other spices. I will have to try yours next time. Thanks for sharing.

These look amazing! I love that you used an apple cutter to cut them. Why didn't I think of that?! π

The apple cutter is definitely a clever idea - as is adding the par-cooked potatoes to hot oil. I have to try this!
