These Gluten Free Banana and Chocolate Muffins are delicious warm from the oven, are easy to make and Gluten Free!
There is something wonderful about the mix of banana and chocolate...smooth, creamy ...and put them together in a muffin...well that's just perfection!
This recipe for Banana and Chocolate Muffins is easy and makes delicious, fluffy and soft, gluten free muffins.
Β After just finishing eating 2 of them, I can tell you they are fantastic straight out of the oven !!
How to make Gluten Free Banana and Chocolate Muffins!
- Preheat oven to 180 degree Celsius Β (350 degree Fahrenheit) - a moderate oven
- Mix the gluten free flour, baking powder into a bowl and then add the sugar and stir. Add in the chocolate chips to the GF flour mixture.
- Mash up one ripe banana in a bowl and mix in the baking soda.
- Mix the almond milk, eggs and oil, in a bowl and then mix with the banana.
- Stir the milk mixture through the GF flour and sugar mixture Β (do it till it isΒ just combined)
- Spoon the mixture into 12x muffin tin that is lined with pretty muffin liners (up to ΒΎ full) and sprinkle with some chocolate chips on top.
Tip - The tip here is not to fill the muffin cups too high... they will overflow while baking....trust me this has happen especially with the firm muffin cups like these ones. :-0
- Bake for 18-20 minutes or until cooked when tested with a skewer (normal muffins will take about 12 minutes but I find that GF muffins take a little longer.)Β Keep an eye on them to make sure they are a little brown on top and test them with a skewer, so it comes out clean.

- 2 cups of gluten free self raising flour - I use Orgran Gluten Free Self Raising Flour
- 1 teaspoon of gluten free baking powder
- ¾ cup of caster sugar

- ⅓ cup (2½ fl oz) vegetable oil

We have made these delicious muffins many times... with dark chocolate bits, milk chocolate and also blueberries!
This recipe is ideal is you want to add in extra flavours because there is only one banana in the mixture Β so the banana flavour is not overpowering!
