Easy Banana and Chocolate Muffins - Gluten Free!

Easy to make and delicious Gluten Free Banana and Chocolate Muffins....sooo good warm from the oven!!

Ingredients
  • 2 cups of gluten free self raising flour - I use Orgran Gluten Free Self Raising Flour
  • 1 teaspoon of gluten free baking powder
  • ¾ cup of caster sugar
  • ¼ teaspoon of baking soda
  • 1 ripe banana (an over ripe one is the best)
  • 1 cup of milk - I use almond milk
  • ⅓ cup (2½ fl oz) vegetable oil
  • 2 eggs
  • ½ cup of chocolate chips (save a few to decorate the top of each muffin)
Instructions
  1. Preheat oven to 180 degree Celsius (350 degree Fahrenheit) - a moderate oven
  2. Mix the gluten free flour, baking powder into a bowl and then add the sugar and stir. Add in the chocolate chips to the GF flour mixture.
  3. Mash up one ripe banana in a bowl and mix in the baking soda.
  4. Mix the almond milk, eggs and oil, in a bowl and then mix with the banana.
  5. Stir the milk mixture through the GF flour and sugar mixture (do it till it is just combined)
  6. Spoon the mixture into 12x muffin tin that is lined with pretty muffin liners ( up to ¾ full) and sprinkle with some chocolate chips on top.
  7. Bake for 18-20 minutes or until cooked when tested with a skewer
  8. Keep an eye on them to make sure they are a little brown on top and test them with a skewer, so it comes out clean.
