Do you ever bake a cake and it is just too big? Β It may just sit in the cake storer for a few days. Well the perfect solution is to bake these apple and banana mini loaves! Their size is just so handy - they are larger than muffins but not so huge as a large cake. The recipe is designed for mini loaves, so each loaf is just perfect!
The Apple and Banana Mini Loaves recipe is extremely easy and only uses 7 ingredients!! - Β brown sugar, eggs,Β butter at room temp, bananas,Β apple purΓ©e, cinnamon andΒ self-raising gluten-free flour (I use the Orgran brand).
You will need to purchase small loaf tins (I use 3 tins for this recipe)Β and the tip to this recipe is to make sure you grease the inside of the tin with butter well and let them cool, before taking out from the mini loaf tins.

They are so delicious when the cakes are cool and spread with butter or margarine!
You could also add in a few extra ingredients...like chocolate pieces, maybe dates or sprinkle with walnuts!
Tip for bananas - I often have bananas left over and I store them inΒ the fridge and even the freezer till I need to make something that needs a banana flavour. (Yes, the bananas do go black when you store them in the fridge or freezer, but the banana inside is still perfect for cooking)
Recipe for Gluten-Free Apple and Banana Mini Loaves
- 150g brown sugar
- 2 eggs
- 80 g butter at room temp
- 2 bananas - mashed
- 140g apple purΓ©e . . Or 2 apples grated
- 1 teaspoon of cinnamon
- 250g self raising gluten free flour
- Sliced apples for the top
- Preheat the oven to 180C - (moderate oven)
- Grease 3 mini loaf tins
- Cream together the butter, brown sugar and eggs
- Add in the mashed banana and the apple puree
- Mix in the cinnamon and and then place evenly into the 3 mini loaf tins
- Place sliced apples on top and cook for around 40 mins (or until a skewer is placed in the centre of the tin and it comes out clean)
- Leave in the tins to cool and then remove and enjoy!!
These apple and banana mini loaves are perfect if you areΒ Coeliac, areΒ gluten intolerant, on a gluten free diet or can't eat wheat products.
When I bake these even my 'gluten full' friends don't know that they are gluten free and happily 'tuck in'!
