Soft, sweet gluten free Sticky Mandarin Loaves that are the perfect citrus dessert with just a little citrus zing!
For so many reasons, Β I have not baked in what feels like for ages! ...and I have realised that I have missed it!
There is something therapeutic about baking. Is it following the simple steps, taking the time to just do one thing at a time or is it the very nice reward at the end?
I am sure it is all of these things but there is nothing better than baking a basic recipe, it working and well... the result is just plain delicious!
So after a break from baking and having a stockpile of mandarins, I broke the baking drought with Gluten Free Sticky Mandarin Loaves! (and the rest of my family are very happy with the break in the drought in baking too!! π )
This recipe for Gluten Free Sticky Mandarin Loaves is just perfect for a warm, sweet dessert for when you need to serve many or maybe just one (with a few for the next day or two π )
These little sweet loavesΒ don't need many ingredients, just butter,Β caster sugar,Β eggs,Β baking powder,Β greek yoghurt and gluten free flour. You could use Orgran Gluten Free Flour Mix or you may like to make your own DIY Gluten Free Flour Mixes.Β ...
Oh! and of course - Mandarins!
You can of course just have little little cake loaves on their own, but taking a little extra time to make the Mandarin Sticky Sauce to drizzle on top is so worth it!.
Mandarin Sticky Sauce is very easyΒ too - simplyΒ caster sugar,Β lemon juice andΒ mandarin juice and you can top the gluten free mandarin loaves with shredded Mandarin peel ...just too tempting!
How to make Gluten Free Sticky Mandarin Loaves
- Preheat the oven to 180ΒΊC and grease the loaf tins with butter or line with baking paper.
- In an electric mixer, beat the butter and sugar together until creamy and then add in the eggs (one at a time) and beat well.
- Then add in the mandarin rind, almond meal, GF flour, baking powder and yoghurt and stir to combine.
- Spoon into the little loaf tins and bake for 20 mins or until a skewer inserted comes out clean and then place tip up-side-down onto a wire rack to cool. (leaving them to cool slightly will make them easier to get out of the loaf tins)Β
Loaf tins - These little loaf tins are very 'cute' and the mixture fit perfectly into 3 of them. At a guess they are around the sameΒ equivalentΒ volume of 2 large muffins.
How to make the Sticky Mandarin Sauce
- In a saucepan,Β over low heat, add in the sugar, lemon juice, and mandarin juice.
- Cook stirring for 5 minutes or until the sugar dissolves. When it does, then bring to the boil and cook for 2 minutes until the sauce thickens.
- Take off the heat and let it cool slightly and then drizzle over the mandarin loaves and sprinkle with mandarin peel.
- 125g butter
- 1 cup of caster sugar
- 3 eggs
- 1 tablespoon of finely grated mandarin rind
- ½ cup of almond meal
- ¾ cup of gluten free flour (see note below)
- 1 teaspoon of baking powder
- ⅓ cup of greek yoghurt
- Sticky Sauce
- ½ cup of caster sugar
- ¼ cup of lemon juice
- ¼ cup of mandarine juice
- To Top - shredded mandarine peel
