In my home we have some favourite dishes that areΒ usually on the menu somewhere, during the week. One of those dishes is this Gluten Free Lemon Chicken Piccata. ItΒ is a delicious, everyday meal that is really easy to makeΒ and is full of flavour!
Chicken Piccata is where the chicken is sliced, coated, sautΓ©ed and then served in a sauce...in this case a delicious lemon and caper sauce!
It is a perfect dish for when you want a 'nice' dinner...but really don't have a lot of energy after a long day. It is one of those dishes where you are happy to lick the plate clean π
Β The best part of this everyday meal is that it doesn't need fancy ingredients, it doesn't take long to cook and it can be served with salad, on rice or even with vegetables.
You can adjust the amount of lemon you add to this dish, but we love lemon flavour and the juice from Β½ a largeΒ lemon and some lemon slices, is just perfect!
Easy Gluten Free Lemon Chicken Piccata Ingredients
- 3Β chicken fillets sliced in half lengthwise
- the juice of Β½ lemon
- 3 slices of lemon
- 3 tablespoon gluten free flour or corn flour
- 3 tablespoon olive oil
- 1Β cup of chicken stock
- 2 tablespoon salted capers - drained
- 2 tablespoon fresh parsley, chopped
- pepper
- salt

How to make Easy Gluten Free Lemon Chicken Piccata
Step 1
Place the sliced chicken breasts between two sheets of baking paper.Β With a kitchen mallet or tenderiser, carefully flatten the chicken until thin.
Step 2
Place the flour on a plate and add a good shake of salt and pepper. Coat the chicken fillets lightly with the flour and shake slightly to remove the excess flour.
Step 3
Heat the oil in a frypan and add in the chicken and cook for 1-2 mins both sides until golden.Β Remove the chicken and cover with foil.
Step 4
Add theΒ freshly squeezedΒ lemon juice, lemon slices, capers and chicken stock to the pan and simmer for a minute or 2.
Step 5
Place the chicken fillets back into the pan and simmer for 5 minutes - or till cooked through and the sauce thickens.
.....Serve on a plate and drizzle the sauce on top, sprinkle with parsley and serve with rice and salad!!
