This Gluten Free Chicken Piccata recipe is ideal for an everyday meal and is chicken fillets smothered in a delicious lemon and caper sauce!

Ingredients
3 chicken fillets sliced in half lengthwise
the juice of ½ lemon
3 slices of lemon
3 tbsp gluten free flour or corn flour
3 tbsp olive oil
1 cup of chicken stock
2 tbsp salted capers - drained
2 tbsp fresh parsley, chopped
pepper
salt
Instructions
Place the sliced chicken breasts between two sheets of baking paper. With a kitchen mallet or tenderiser, carefully flatten the chicken until thin.
Place the flour on a plate and add a good shake of salt and pepper. Coat the chicken fillets lightly with the flour and shake slightly to remove excess flour.
Heat the oil in a frypan and add in the chicken and cook for 1-2 mins both sides until golden. Remove the chicken and cover with foil.
Add the freshly squeezed lemon juice, lemon slices, capers and chicken stock to the pan and simmer for a minute or 2.
Place the chicken fillets back into the pan and simmer for 5 minutes - or till cooked through and the sauce thickens.
Serve on a plate and drizzle the sauce on top, sprinkle with parsley and serve with rice and salad!!
