Easy Gluten Free Lemon Chicken Piccata
This Gluten Free Chicken Piccata recipe is ideal for an everyday meal and is chicken fillets smothered in a delicious lemon and caper sauce!
Serves: 3
  • 3 chicken fillets sliced in half lengthwise
  • the juice of ½ lemon
  • 3 slices of lemon
  • 3 tbsp gluten free flour or corn flour
  • 3 tbsp olive oil
  • 1 cup of chicken stock
  • 2 tbsp salted capers - drained
  • 2 tbsp fresh parsley, chopped
  • pepper
  • salt
  1. Place the sliced chicken breasts between two sheets of baking paper. With a kitchen mallet or tenderiser, carefully flatten the chicken until thin.
  2. Place the flour on a plate and add a good shake of salt and pepper. Coat the chicken fillets lightly with the flour and shake slightly to remove excess flour.
  3. Heat the oil in a frypan and add in the chicken and cook for 1-2 mins both sides until golden. Remove the chicken and cover with foil.
  4. Add the freshly squeezed lemon juice, lemon slices, capers and chicken stock to the pan and simmer for a minute or 2.
  5. Place the chicken fillets back into the pan and simmer for 5 minutes - or till cooked through and the sauce thickens.
  6. Serve on a plate and drizzle the sauce on top, sprinkle with parsley and serve with rice and salad!!
