I must thank a very lovely lady - Mari for sharing this delicious recipe with me! Lovely lady and lovely dessert. Her original recipe contained gluten but with a few little tweaks... I have created a gluten free version of Ricotta Kisses (Baci di Ricotta) and they are heavenly! So delicious that they are very hard to stop eating! (yes, we made a few batches because they didn't last long enough to take photos of them...thanks to my boys :-))
They are easy to make, and are perfect dusted with icing sugar but go ...Oh SoΒ well with fresh raspberries and drizzled with maple syrup!
Yes they are devine and the best part is eating them warm! Just when they have finished bobbling away in the pot, drain them, dust withΒ icing sugar and pop one straight into your mouth....just delicious. Β They are warm, fluffy, crispy and sweet...all in one little mouthful (...Β and a few more mouthfuls after that! πΒ )
Sometimes the most basic of recipes are the ones that thrill the most.
To be honest they are fun to cook. Right in front of your eyes, as they bubble in the oil, they puff up to become wonderful warm, sweet balls of ricotta.

Recipe forΒ Gluten Free Ricotta Kisses - Baci di Ricotta
- 200 g ricotta cheese
- 2 large eggs
- β cup of Gluten Free plainΒ flour
- 2Β teaspoons baking powder
- Β½ teaspoon ground cinnamon (add 1 teaspoon if you love the taste of cinnamon)
- 1 tablespoon caster sugar
- 1Β teaspoon vanilla extract
- vegetable oil Β for frying
- 2 tablespoons ofΒ Β icing sugar (to dust over the top of the Ricotta Kisses)

How to make Gluten Free Ricotta Kisses - Baci di Ricotta
- In a large bowl, add theΒ ricotta and eggs beat until smooth.
- Add the gluten free plain flour, baking powder, cinnamon, sugar and vanilla extract. Beat till it is aΒ smooth batter.
- In a large saucepan add in the oil (about 2 cms high) and heat the oil. It is ready when you add a small spoonful of the mixture and the oil bubbles around the mixture.
- Then carefully drop in teaspoons of the mixture. It is best to only add in 6 at a time asΒ they will puff up on cooking.
- When the base starts to turn brown, carefully flip over the balls and cook the other side till they turn golden brown.
- With a slotted spoon, lift out the Ricotta Kisses and place them on some paper towelΒ to remove the excess oil.
- Place the Ricotta Kisses onto a plate and sprinkle with icing sugar and eat them while they are warm and sweet!
