Gluten Free Ricotta Kisses - Baci di Ricotta!
  • 200 g ricotta cheese
  • 2 large eggs
  • ⅓ cup of Gluten Free plain flour
  • 2 teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • 1 tablespoon caster sugar
  • 1 teaspoon vanilla extract
  • vegetable oil for frying
  • 2 tablespoons of icing sugar (to dust over the top of the Ricotta Kisses)
  1. In a large bowl, add the ricotta and eggs beat until smooth.
  2. Add the gluten free plain flour, baking powder, cinnamon, sugar and vanilla extract. Beat till it is a smooth batter.
  3. In a large saucepan add in the oil (about 2 cms high) and heat the oil. It is ready when you add a small spoonful of the mixture and the oil bubbles around the mixture.
  4. Then carefully drop in teaspoons of the mixture. It is best to only add in 6 at a time as they will puff up on cooking.
  5. When the base starts to turn brown, carefully flip over the balls and cook the other side till they turn golden brown.
  6. With a slotted spoon, lift out the Ricotta Kisses and place them on some paper towel to remove the excess oil.
  7. Place the Ricotta Kisses onto a plate and sprinkle with icing sugar and eat them while they are warm and sweet!
