The Useful Hints and Tips Series is a collection of ideas that have been proven in my home and shared with you. They may be ones that you have not heard of before or ones that give you little reminders. 😉

    Eggs

     

    To tell if eggs are fresh simply pop one in a bowl of water and if it sinks...it is fresh! If is rises and floats to the top...throw it away. As egg shells are porous they let air into the egg and over time the egg becomes lighter and lighter which enables the egg to float. If it floats it is too old to cook with!

    Homemade Mayonnaise

    To make the perfect mayonnaise at home, quickly, simply use one egg (at room temperature) and 1 cup of mild oil (that doesn't have a strong flavour) like light olive oil, canola or safflower.

    Using a mason jar (that has a large opening) with a lid and a stick blender, place the egg and oil in the jar and then put in the stick mixer. Turn on the blender and start from the base of the jar and mix until it goes creamy, then gradually lift the mixer till all the mixture has been mixed. Stir it and place on the lid and store it in the fridge for up to a week. You can also add a little lemon juice and mustard to add some flavour. This all takes just 30 seconds !!

    To stop cutting boards from slipping on the counter when cutting...simply place a damp tea towel or damp paper towel under the board....this makes cutting much safer (saves your finger tips...learnt that one the hard way ;-0)!!

    Baking Powder

    Baking Powder can be too old to use and stop your baking from rising. The best way to find out if it is ok to use, simply add a teaspoon to a glass of water. If it doesn't fizz up, the baking powder is too old and should be thrown away. If it fizzes....go ahead and start your baking!!

    Potatoes

    To keep potatoes from budding and sprouting, place an apple in with them. This will help keep your potatoes from growing and if you purchase organic potatoes (without the spray that prevents them from sprouting) they will last longer.

      These are all great tips. I have always wanted to make my own mayo but never really through I could do it. I will try someday, it really does not look that hard. Did it taste good?
