Β These Gluten Free Apple and Cinnamon Muffins are delicious eaten warm straight from the oven...they areΒ sweet, soft and delicious (and gluten free!)
So, these are the muffins we made when we need to use up the last of the apples sitting in the fruit bowl...you know the ones that everyone picks up, then promptly puts back ...just to choose the one right next to it.Β
To put these 'unloved' apples to good use....we grate them and throw them in with gluten-free flour and a good dusting of cinnamon...plus a few other ingredients and we end up with warm, delicious gluten-free muffins!
At my home....we don't ice them because....well....they never last long enough!
We eat them warm straight from the oven, with just a touch of melted butter brushed Β on top and extra sprinkling of cinnamon!
Gluten Free Apple and Cinnamon Muffins
Ingredients
- 2 cups of self raising gluten free flour - I use Orgran Gluten Free Self Raising FlourΒ
- Β½ teaspoon of baking powder
- ΒΎ cup of caster sugar (plus some for sprinkling on top)
- 2 apples - grated
- 2Β teaspoons of cinnamon- 1 for the flour mixture and 1 teaspoon for dusting on the top of the muffins
- β cup of light olive oil
- 1 cup of milk - (I use almond milk but you can use the milk of your liking)
- 2 eggs - whisked
- 20g of melted butter - to brush on top of the muffins
- Preheat oven to a moderate temperature - 180 degrees
- Place muffins wrappers into a muffin tin
- Mix flour, baking powder, sugar and cinnamon in a bowl
- Grate apples
- Whisk eggs, oil and milk in another bowl and add in the grated apples and combine
- Combined the flour mixture and apple/egg mixture together
- Spoon into muffin wrappers and brush with a little melted butter and sprinkle with cinnamon and sugar.Β
- Bake in the oven for around 18-20 mins till slightly brown on top and till a skewer placed in the middle of the muffin comes out clean.
