This is a great recipe for Easy Gluten Free Muffins with Orange and Chocolate! Muffins that have a hint of fresh orange & are oozing with a chocolate centre!
I originally was craving for muffins ...soft, fluffy and moist muffins!
Muffins are the best comfort food....especially hot, straight out of the oven!
The best part is pulling that crispy muffin top off and eating that first and then rewarding yourself with the remaining soft, fluffy base.... (this sounds like the intro to a good romantic movie...)
So I took the risk and experimented with a muffin recipe just to add a little bit of flair to those soft muffins.
Β I added freshly squeezed orange juice and that gave them the perfect citrus taste!
..AND...
....then I filled the centre with warm, oozing chocolate!!
Yes - they became awesome!!
...I know my family was very happy with the outcome of the experiment !Β

So I thought I would share with you these gorgeous muffins ...
and know that they will bring a smile to your day...(and to your tummy! πΒ
Recipe for Easy Gluten Free Muffins with Orange and Chocolate!
Ingredients
makes 10
Dry IngredientsΒ
- 1 ΒΎ cup of gluten free plain flour
- 2 ΒΌ teaspoons of baking powder
- ΒΌ teaspoon of salt
- ΒΎ cup of caster sugar
- (Icing sugar to dust the top)
Wet IngredientsΒ
- 1 cup of Greek yoghurt
- Β½ cup of olive oil
- 1 egg
- Β½ cup of freshly squeezed orange juice
- Orange zest of one orange
- and melted chocolate for the filling (or you could use Nutella)
Method
- Preheat oven to 180 degrees Celcius or 350 degrees Fahrenheit ( a moderate oven)
- In a bowl mix together the dry ingredients - flour, baking powder, salt and sugar.
- In another bowl, whisk together the wet ingredients - oil, egg, yoghurt and orange juice and zest.
- Tip the wet ingredients into the dry ingredients and combine. The mixture will be thick but don't stir for too long.Β
- Spoon into a muffin tin (lined with muffin liners) to ΒΎ full. Tap on the counter to remove any air bubbles.
- Bake for 20 mins in a moderate oven.
- Test with a tooth pick and if it comes out clean, they will be ready!!
Yes..... fill it with chocolate!Β
- Then using a cupcake corer, scoop out the middle of the muffin.
- Keep the part that comes out (as it will be place back in on top of the melted chocolate.)
- In the microwave gradually melt some chocolate till it is warm and just about runny.
- Spoon the chocolate into the open space in the middle of the muffin.
- Replace the muffin piece and carefully push down.
Top with icing sugar and ...
Β ...enjoy these warm gluten free muffins, that have an orange tang and filled with melted chocolate!
