A Gluten Free Almond and Carrot Cake recipe that makes a delicious, moist, full-of-flavour carrot cake with a smooth lemon cream cheese icing!
Sunday mornings are my time to bake and one recipe I enjoy making (and eating π) is...Gluten Free Almond and Carrot Cake.
I love this recipe because it is a cake that you sit down with a cup of tea and really enjoy!
Β It is not the sort you quickly eat but one you indulge in and savour every bite.
It is the type of cake you eat with a fork and napkin! You know those types of cake, when you take the time and enjoy it!
This recipe for Almond and Carrot Cake makes a light, fluffy and moist cake... and it is gluten free...and delicious!
The trick to this recipe is to make sure you make the egg whites fluffy and stiff. This will help give the cake the moist, spongy texture and help it rise.
The recipe list may look daunting...but don't be put off
...it really is easy and with only a few steps.Β
How to make the Gluten Free Almond and Carrot Cake!
- Preheat the oven to 180ΒΊC or 350ΒΊF.
- Line a cake baking tin with baking paper.
- In a bowl, combine the gluten-free SR flour, baking powder, baking soda, cinnamon and nutmeg.
- In another bowl, beat the egg yolks (keep the egg whites in a separate bowl), brown sugar and maple syrup (or honey) until creamy.
- Add in the grated carrots, almond meal and gluten-free flour mixture to the egg yolk mixture and stir.
- Beat the egg whites, with a mixer until they are stiff. Add this to the carrot mixture and carefully fold in. I add in the egg whites in a few batches.
- Pour in the mixture into the cake tin and sprinkle the top with a little extra cinnamon.
- Bake in the oven for 40 mins and it is ready when a skewer place in the centre of the cake comes out clean.
- Leave it in the tin for 10 mins or so and then leave to cool on wire cake rack.
- When the cake is cool, then add the icing.
Cream Cheese IcingΒ
- Simply, mix the cream cheese, icing sugar and lemon juice until it is smooth and the place on top of the cake.
- I decorate with crushed peanuts to add a little crunch. You could add almonds or walnuts.

- ½ cup gluten-free self raising flour
- 4 large carrots - grated
- ½ teaspoon of baking powder
- 1 teaspoon baking soda

- 2 Tablespoons maple syrup or honey

- 1 cup confectioner's (icing) sugar
- 2 teaspoons fresh lemon juice

As soon as I saw your recipe, I had a feeling it was going to be really good and I have been thinking about making it ever since.
