  • 5 eggs
  • ½ cup of olive oil
  • 1 cup of caster sugar
  • 1 teaspoon of vanilla essence
  • 1 cup of coconut flour less 2 tablespoons
  • 2 tablespoons of almond meal/flour
  • ½ cup of cocoa powder
  • ¾ teaspoon of baking soda
  • ¼ teaspoon gluten-free baking powder
  • 1 cup of black coffee


  • Preheat the oven to 180ºC and line a square cake tin with baking paper.
    Add to a bowl and whisk, 5 eggs, ½ cup of olive oil, 1 cup of caster sugar, 1 teaspoon of vanilla essence
  • Then add the following to the bowl with egg mixture and mix together, 1 cup of coconut flour (less 2 tablespoons), 2 tablespoons of almond meal/flour, ½ cup of cocoa powder, ¾ teaspoon of baking soda, ¼ teaspoon gluten free baking powder
  • Pour in 1 cup of black coffee...and mix together till smooth.
  • Pour into the cake tin and bake in the oven for 25 mins or until a toothpick or cake tester is inserted and it comes out clean. Remove the cake from the tin and leave to cool on a cake rack.
  • Cream - Simply add cream to an electric mixture and beat till the cream is thick and fluffy and spoon onto the top of the cooled cake.
