This Gluten Free Chocolate Brownies recipe is easy to make, is full of dark chocolate and crunchy walnuts and tastes 'out of this world'!
Recipe type: Dessert - Brownies
  • ½ cup of plain gluten free flour (I use Orgran Plain Gluten Free Flour or se DIY Gluten Flour Mixes)
  • ½ cup of rice flour
  • ¼ teaspoon of baking powder
  • 1 cup of caster sugar
  • ¼ teaspoon of salt
  • 100 g of butter - cubed
  • 150 g of cooking chocolate - dark chocolate broken into smaller pieces (I use Plaistowe)
  • 2 eggs
  • ½ cup of walnuts-chopped
  1. Preheat oven to 180ºC or 350ºF (moderate oven) and line a square baking tin with baking paper.
  2. In a bowl mix together the gluten free flour, rice flour, baking powder and sugar.
  3. In a microwave proof bowl add the cubed butter, the chocolate (broken into smaller squares) and melt in the microwave and stir to combine.
  4. Tip....(I melt the chocolate and butter mixture for 25 seconds at a time and then stir and then melt for another 25 seconds. I repeat this till the chocolate and butter has melted. Doing it this way, makes sure you don't burn the chocolate and there is nothing worse than the smell of burnt chocolate...right?)
  5. Lightly beat the eggs and then add them to the flour mixture, and then add the chocolate mixture.
  6. Mix until smooth.
  7. Lightly beat the eggs and then add them to the flour mixture, and then add the chocolate mixture.
  8. Mix until smooth.
  9. Pour the mixture into the baking tin (lined with baking paper) and add the walnuts to the top.
  10. Bake in the oven for 20 mins or till a skewer is inserted and comes out with a few crumbs attached.
  11. Let it cool in the pan and then remove from the tin by lifting out the baking paper and then cut into squares.
  12. Serve with cream or ice cream or you can dust with icing sugar or cocoa powder.
