Chicken, Cream Cheese and Cashew Meatballs (GF)
These delicious gluten free Chicken, Cream Cheese and Cashew Meatballs are not your ordinary meatballs...they are just a little more special... perfect for entertaining!
  • 500g chicken mince
  • ½ onion- diced
  • 100g cream cheese- softened
  • ½ cup of cashews- finely chopped
  • 10 basil leaves - I use a mixture of Basil and Thai Sweet Basil
  • 2 tablespoons of coriander
  • Lemon rind of a small lemon
  • Lemon pepper - a good sprinkle
  • 2 tablespoons of gluten free flour and some gluten free flour to roll the meatballs in.
  • 1 teaspoon of sweet chilli sauce - gluten free and some sweet chilli sauce for dipping
  • olive oil for the frypan
  1. Mix together the chicken mince, onion, basil, coriander, cashews, lemon rind, lemon pepper, 2 tablespoons of gluten free flour, 1 tablespoon of sweet chilli sauce and cream cheese. (I cut up the cream cheese into smaller pieces).
  2. Using wet minds, take a small amount and shape into balls and roll in gluten free flour to coat.
  3. Tip....(having wet hands stop the meatballs sticking to your hands and helps the flour to stick to the meatballs)
  4. Add oil to a frypan and cook the patties until cooked through and golden brown.
  5. Serve with sweet chilli dipping sauce.
