Old Fashioned Tomato Relish! (GF)
A delicious, full-flavoured Tomato Relish that is gluten-free and perfect on hamburgers, steak or even smeared on fresh bread or crackers!
  • 2 cups of tomatoes cut into chunky pieces
  • ½ brown onion - sliced
  • 2 tablespoons of red wine vinegar
  • 4 tablespoons of maple syrup
  • 2 tablespoons of brown sugar
  • Cracked black peppercorn (or ground pepper if you prefer)
  • Fresh basil
  • You could add chilli or dried chilli flakes if you like it hot!)
  1. Place all the ingredients into a saucepan on medium heat and stir to combine.
  2. Bring them to the boil, while stirring.
  3. Turn down the heat to medium heat and let the mixture simmer for about 20 mins.
  4. Then reduce the heat further and simmer for another 10 mins. Make sure you stir the mixture regularly.
  5. The mixture will start to thicken. Once this happens, then remove from the heat and allow the mixture to cool.
  6. Spoon into airtight containers and put them in the fridge.
