Easy Slow Cooker Chicken Tikka Masala!

Ingredients
  • 1 large onion, diced
  • 6 skinless chicken thighs
  • 1 tablespoon ground coriander
  • 1 tablespoon ground cumin
  • 1 teaspoon salt
  • 3 tablespoons garam masala
  • 1 can coconut cream or milk
  • 1 teaspoon of minced garlic
  • 1 tablespoon of minced ginger
  • 1 teaspoon red pepper flakes
  • 2 cans crushed tomatoes
  • 1 tablespoon sugar
  • 4 medium sized potatoes - diced
  • rice and coriander/cilantro to serve
Instructions
  1. In a slow cooker, add in the diced onions and lay the chicken thighs on top.
  2. In large bowl add in the minced garlic, minced ginger, ground coriander, ground cumin, red chilli flakes, garam masala, sugar and salt and mix. Then pour in the coconut cream/milk and tinned tomatoes and mix.
  3. Pour over the chicken and add in the diced potatoes and stir so that all the chicken and potatoes are mixed with the coconut cream mixture.
  4. Place on the lid and cook in the slow cooker on high for 4 hours or low for 6 hours or until the potatoes are soft and can be broken apart by the back of a wooden spoon.
  5. Serve over rice and sprinkle with fresh coriander/cilantro!
