Serves: 4
  • 4 corn on the cob
  • 4 teaspoons of butter
  • onion salt
  • ground paprika
  • dried chilli flakes
  • ¼ cup of parmesan cheese
  • fresh coriander leaves
  • 1 lime cut into wedges
  • need - foil - aluminum foil
  1. Pre-heat the oven to 180ºC or 350ºF - moderate oven
  2. remove the husks and silks and lay down the corn cobs on a piece of aluminium foil. One cob for one piece of foil.
  3. sprinkle the corn with  paprika, onion and garlic salt, some of the dried chilli flakes and a squeeze of lime and then top with a teaspoon of butter for each corn. (If wanting to be a bit healthier, you could also use olive oil or reduce the amount of butter)
  4. Cover the corn with the foil to make the foil parcels - so the butter won't seep out,
  5. Bake in the oven for 30 mins or till the corn is tender.
  6. Carefully open the foil and while the corn is warm, sprinkle over the parmesan cheese, some more of the dried chilli flakes,  squeeze over the lime and add the coriander on top.
  7. Keep in the foil when serving as this will keep the corn warm and melt the parmesan cheese.
