Serves: 4
Ingredients
3 cups cooked rice (I use basmati white rice cooked in gluten free chicken stock)
3 tablespoons olive oil - (1 to start and 2 for over the rice later)
1 cup of diced bacon
½ teaspoon of minced garlic
½ cup onion, diced
½ cup carrots, sliced lengthwise
½ cup frozen peas and beans
¼ cup capsicum - diced (red pepper)
½ cup of broccoli - chopped
¼ cup canned water chestnuts
¼ cup Tamari soy sauce (gluten free) - you can add more or less to your liking
1 teaspoon sesame oil
(and chilli flakes if you like a little heat)
Instructions
Heat 1 tablespoon of olive oil in a large wok or frypan over medium heat.
Add the minced garlic, onion, and bacon and cook for a minute and then the capsicum, carrots and cook for two minutes.
Then add the frozen peas and beans and cook for a minute or so.
Add the cold cooked rice to the wok/frypan and stir to combine
Then add in the olive oil, sesame oil and tamari - a little at a time and stir to combine. Each time you add some tamari, sesame oil and olive oil, let the rice 'fry' a little and heat through.
Taste it and adjust if you need to add more tamari or sesame oil.
