Serves: 4
Ingredients
  • 4 small ripe avocados (or 3 large ones)
  • 3 tablespoons of chopped coriander (cilantro)
  • 2 large ripe tomatoes - seeded and diced
  • ½ red onion - diced
  • chillies - to your liking
  • A good squeeze of lemon or lime juice - about 2 tablespoons
  • ¼ teaspoon of salt
  • ¼ teaspoon of ground cumin (you can add more if your like the flavour)
  • Corn chips (gluten free ones) to serve with
Instructions
  1. Cut the tomatoes in quarters and remove the seeds. (This way your Guacamole wont be slushy and will be nice and chunky!) Then dice the flesh of the tomatoes.
  2. In a bowl add in the diced tomatoes, diced red onion, chillies (the amount to your liking) , chopped coriander, add the salt and stir to combine.
  3. In a separate bowl, add the avocados and using a fork mush the avocados. Then add in a good squeeze of lemon or lime juice (this stops the avocados turning brown and adds a tang of flavour) and then add in the cumin and stir to combine.
  4. Add the avocado mixture to the tomato mixture and combine....this is when it really starts to smell wonderful!
  5. Spoon into a bowl and serve with corn chips....or with nachos....or in tacos...or as a side dish to a meal.....or simply just use a spoon and eat it all on its own....yum!!
