How to make Easy Gluten Free Vanilla and Almond Cookies!

These Easy Gluten Free Vanilla and Almond Cookies are soft and so delicious and they just melt in your mouth...but you just can't stop at one!!

  • 1 cup of butter (at room temp)
  • 1 cup of sugar
  • 2 eggs
  • 1½ cups of gluten free flour (I use Orgran gluten free plain flour)
  • 2 cups of almond meal
  • 2 teaspoons of vanilla
  • ½ cup of icing sugar (powdered sugar) for dusting
  1. Preheat the oven to 180ยบ degrees Celsius
  2. Using an electric mixer, cream the butter and sugar and then slowly add in the eggs and vanilla and mix.
  3. Add in the gluten free flour and almond meal and using a wooden spoon, stir to combine. (just a tip...the dough will be soft)
  4. Place in the fridge of an hour or two or until the mixture has harden and the butter sets. This makes it easier to roll into teaspoon size balls.
  5. Place the teaspoon sized balls onto a baking tray lined with baking paper and bake in the oven for 20 mins. (make sure you leave enough room as they spread.)
  6. As soon as they come out the oven dust with icing sugar (this way the icing sugar will set on top of the cookie)
