Gluten Free Quinoa and Tahini Bars

- 1 cup Tahini (or peanut butter)
- ½ cup maple syrup
- 2 tablespoons of coconut oil
- 1 tablespoon of vanilla extract
- 3 tablespoons of Cacao
- 2 cups of puffed cereal - I use Orgran Quinoa Puffs,
- 2 tablespoons chia seeds
- 1 cup of coconut
- ½ cup crushed peanuts (or almonds)
- ¼ cup of cranberries
- Simply add all the ingredients into a blender and mix!....
- Press the mixture into a lined baking tin (with greaseproof paper) and flatten with the back of a spoon.
- While it is soft, slice into bars.
- Place into the fridge for a few hours for the bars to set.
- (Note: If you don't like the stronger flavour of tahini, peanut paste or almond butter works really well too.)
