Now there is nothing better than starting your day in a good mood and being healthy! This Gluten Free Healthy Breakfast Parfait is one way of doing that...having a special, tall glass filled with healthy ingredients...will bring a smile to anyone's face first thing in the morning!
A 'Dessert Parfait' is flavoured custard mixed with whipped cream and served in a tall glass and layered withΒ fresh fruit, ice-cream and topped with whipped cream!....delicious right!Β
...butΒ a 'Breakfast Parfait' is just as delicious but healthier! ....and the best way to start the day at breakfast!
A breakfast parfait starts with layering yoghurt, then toasted almonds, then fresh fruit, more toasted almonds and drizzled with a little honey. ...but yes it is still served in a tall glass!
It is amazing how something can taste that extra bit magicalΒ when it is served in a tall glassΒ and eaten with a long handled spoon! (oh....very posh!)
Β There is nothing better than dippingΒ down to the base of the glass and scoopingΒ up some of the vanilla infused yoghurt, some mixed berries, a choc bit or two, fresh banana, crispy toasted almonds with a hint of honey...all in just one spoonful!
Now that is a goodΒ great breakfast...healthy, delicious, packed with protein, it doesn't take long and it even looks spectacular!
So much better than a boring bowl of cereal to start your day!!
Ingredients for Healthy Breakfast Parfait
Per serve
- 3 large tablespoons of Greek Yoghurt
- a drop or 2Β drops of vanilla, or a small squeeze of lemon juice, or a drizzle of honey, to flavour the yoghurt
- 3 tablespoons of toasted sliced almonds
- Β½ cup of fresh or frozen mixed berries
- Β½ large banana
- 1 teaspoon of chocolate bits
- a drizzle of honey - to your liking.
...and one very, special, tall glass and a long handled spoon!! π
How to make the Healthy Breakfast Parfait
The tip to this delicious breakfast is all in the toasted almonds..not just whole almonds but the slender slicedΒ type. When they are toasted they are perfect 'little crisps of crunch'.
The Tips to Toasting the Almonds
- Spray the frypan with spray olive oil and on a low heat, add in the sliced almonds and toast them till some of them are just starting to turn brown.
Tip -Β Toss the almonds in the frypan regularly so they don't burn! Turn off the heat and remove from the frypan onto a clean, dry plate till they are cool.
- Add 3 large dollops of greek yoghurt to the base of a tall glass and swirl though a drop or two of vanilla (or lemon if you prefer a tangy flavour or honey if you like it sweeter)
- Layer with some of the toasted almonds and then layer with fresh berries (or frozen ones - Tip just make sure they thaw out on a plate first.)
- Then sprinkle with the toasted almonds again (and a few dark chocolateΒ bits....just because!!)
- Top with sliced banana. Tip - To get the bananas to stand tall, simply cut each banana slice on a diagonal angle not just straight across.
- Then sprinkle over the bananas with more of the toasted almonds and drizzle with a little amount of honey. This part is optional if youΒ don't want a sweeter breakfast)Β
- It is best served immediately so that the toasted almonds stay crispy and crunchy!
