Easy Banana and Chocolate Muffins - Gluten Free!

- 2 cups of gluten free self raising flour - I use Orgran Gluten Free Self Raising Flour
- 1 teaspoon of gluten free baking powder
- ¾ cup of caster sugar
- ¼ teaspoon of baking soda
- 1 ripe banana (an over ripe one is the best)
- 1 cup of milk - I use almond milk
- ⅓ cup (2½ fl oz) vegetable oil
- 2 eggs
- ½ cup of chocolate chips (save a few to decorate the top of each muffin)
- Preheat oven to 180 degree Celsius (350 degree Fahrenheit) - a moderate oven
- Mix the gluten free flour, baking powder into a bowl and then add the sugar and stir. Add in the chocolate chips to the GF flour mixture.
- Mash up one ripe banana in a bowl and mix in the baking soda.
- Mix the almond milk, eggs and oil, in a bowl and then mix with the banana.
- Stir the milk mixture through the GF flour and sugar mixture (do it till it is just combined)
- Spoon the mixture into 12x muffin tin that is lined with pretty muffin liners ( up to ¾ full) and sprinkle with some chocolate chips on top.
- Bake for 18-20 minutes or until cooked when tested with a skewer
- Keep an eye on them to make sure they are a little brown on top and test them with a skewer, so it comes out clean.
