Slow Cooker Asian Shredded Chicken

A delicious and easy way to make gluten free, slow cooker, shredded chicken, that has an asian flavour, that is perfect topped on rice, in wraps, on nachos or in salads!

Ingredients
  • 2 tablespoons minced ginger
  • 2 tablespoons minced garlic
  • 3 tablespoons tamari - gluten free (*see information about tamari below)
  • 1 tablespoon rice vinegar
  • 1 tablespoon chilli garlic sauce (from asian grocers)
  • 2 teaspoons sesame oil
  • 1 tablespoon olive oil
  • ¼ cup of gluten free chicken stock
  • 6 chicken thighs
  • When serving - 1 tablespoon of chopped fresh coriander and a teaspoon of chilli garlic sauce.
Instructions
  1. In a bowl add in the ginger, garlic, tamari, rice vinegar, chilli garlic sauce, sesame oil, olive oil and chicken stock and mix together.
  2. Place the chicken thighs in a slow cooker and pour the sauce on top and mix through.
  3. Put the slow cooker on high for 4 hours.
  4. Then take the chicken out and using two forks, shred the chicken, and then place it back into the slow cooker. Stir to mix with the sauce and leave it to absorb the flavours for another 30 mins or so.
  5. When serving sprinkle with chopped coriander and some extra chilli garlic sauce!
