Soft, sweet gluten free mandarin loaves that are the perfect citrus dessert with just a little zing!

Ingredients
  • 125g butter
  • 1 cup of caster sugar
  • 3 eggs
  • 1 tablespoon of finely grated mandarin rind
  • ½ cup of almond meal
  • ¾ cup of gluten free flour (see note below)
  • 1 teaspoon of baking powder
  • ⅓ cup of greek yoghurt
  • Sticky Sauce
  • ½ cup of caster sugar
  • ¼ cup of lemon juice
  • ¼ cup of mandarine juice
  • To Top - shredded mandarine peel
  • You could use Orgran Gluten Free Flour Mix or you may like to make your own. See the post DIY Gluten Free Flour Mixes.
Instructions
  1. Preheat the oven to 180ÂșC
  2. Grease the loaf tins with butter
  3. In an electric mixer, beat the butter and sugar together until creamy
  4. Add in the eggs (one at a time) and beat well
  5. Add in the mandarin rind, almond meal, GF flour, baking powder and yoghurt and stir to combine
  6. Spoon into the loaf tins
  7. Bake for 20 mins or until a skewer inserted comes out clean and place onto a wire rack to cool
  8. How to make the Sticky Mandarin Sauce
  9. In a saucepan, over low heat, add in the sugar, lemon juice, and mandarin juice.
  10. Cook stirring for 5 minutes or until the sugar dissolves. When it does, then bring to the boil and cook for 2 minutes until the sauce thickens.
  11. Take off the heat and let it cool slightly and then drizzle over the mandarin loaves and sprinkle with mandarine peel.
