Gluten Free Sticky Mandarin Loaves

- 125g butter
- 1 cup of caster sugar
- 3 eggs
- 1 tablespoon of finely grated mandarin rind
- ½ cup of almond meal
- ¾ cup of gluten free flour (see note below)
- 1 teaspoon of baking powder
- ⅓ cup of greek yoghurt
- Sticky Sauce
- ½ cup of caster sugar
- ¼ cup of lemon juice
- ¼ cup of mandarine juice
- To Top - shredded mandarine peel
- You could use Orgran Gluten Free Flour Mix or you may like to make your own. See the post DIY Gluten Free Flour Mixes.
- Preheat the oven to 180ÂșC
- Grease the loaf tins with butter
- In an electric mixer, beat the butter and sugar together until creamy
- Add in the eggs (one at a time) and beat well
- Add in the mandarin rind, almond meal, GF flour, baking powder and yoghurt and stir to combine
- Spoon into the loaf tins
- Bake for 20 mins or until a skewer inserted comes out clean and place onto a wire rack to cool
- How to make the Sticky Mandarin Sauce
- In a saucepan, over low heat, add in the sugar, lemon juice, and mandarin juice.
- Cook stirring for 5 minutes or until the sugar dissolves. When it does, then bring to the boil and cook for 2 minutes until the sauce thickens.
- Take off the heat and let it cool slightly and then drizzle over the mandarin loaves and sprinkle with mandarine peel.
