Gluten Free Chocolate Peanut Butter Bars

- 1 cup of gluten free oats
- 1 cup of desiccated coconut
- ¼ cup of almond meal
- ¾ cup of peanut butter
- ½ cup of honey
- ¼ teaspoon of salt
- 1 teaspoon of vanilla
- Topping
- ¼ cup of dark chocolate bits
- 1 tablespoon of peanut butter
- In a bowl add in the oats, coconut and almond meal and mix together
- In a microwave bowl add in the butter and honey and melt in the microwave
- Add in the vanilla and salt and mix
- Mix with the dry ingredients
- and pour into a pan that is lined with baking paper and let it sit on the counter while making the topping.
- For the topping
- Melt the chocolate bits, peanut butter together
- Spread the melted chocolate and peanut butter over the base and leave it to set or place in the fridge to set.
- Best stored in an airtight container...if there is any left!
